Decadent Peanut Butter Dulce de Leche Oatmeal

Hello, folks!

Today, I’m leaning into something unapologetically rich and comforting. While oatmeal is often simple and wholesome, sometimes it deserves a dessert-style twist that still works beautifully for breakfast. So, let’s dive into this Peanut Butter Dulce de Leche Oatmeal.

Why You’ll Love This Peanut Butter and Dulce de Leche Oatmeal

  • Deeply Caramelized Flavour: Because the dulce de leche cooks directly with the oats, it melts into the mixture and creates a luscious caramel depth throughout.
  • Nutty and Creamy: Peanut butter blends into the oatmeal as it simmers, giving richness and a smooth, velvety texture.
  • Quick Stovetop Breakfast: This recipe comes together in just a few minutes, making it practical even on busy mornings.
  • Customizable Finish: You can top it with extra peanut butter, more dulce de leche, dark chocolate, or chopped peanuts for added texture.

Flavour and Texture Profile

This oatmeal is thick, creamy, and slightly chewy, depending on how long you cook it. The peanut butter adds nutty warmth and body, while the dulce de leche contributes a caramel-like sweetness that feels rounded rather than sugary. Vanilla softens the overall flavour and enhances the dessert-style character without overwhelming the oats.

Ingredients You’ll Need for This Peanut Butter Dulce de Leche Oatmeal

To make this caramel oatmeal, you only need a few pantry staples that transform simple oats into something luxurious.

  • Rolled Oats: Old-fashioned oats provide structure and a pleasant chew. They hold up well to the rich ingredients and create a hearty base.
  • Water: Used for cooking the oats to your preferred thickness. You can adjust the quantity slightly depending on how creamy or thick you like your oatmeal.
  • Salt: Just a small pinch enhances sweetness and balances the caramel notes.
  • Peanut Butter: Stirred directly into the oats while cooking, it melts and thickens the mixture while adding nutty richness. Smooth peanut butter works especially well for a silky texture.
  • Dulce de Leche: Also cooked into the oats, it dissolves and infuses the entire bowl with caramel flavour rather than sitting only on top.
  • Vanilla Extract: Added at the end for warmth and aromatic depth.

How to Make Peanut Butter Dulce de Leche Oatmeal

To prepare this Peanut Butter Dulce de Leche Oatmeal, start by bringing water and a pinch of salt to a boil in a medium saucepan. Once boiling, reduce the heat and stir in the rolled oats along with the peanut butter and dulce de leche. As the oats cook, both ingredients melt into the mixture, creating a thick, creamy base.

Continue cooking for a few minutes, stirring occasionally, until the oats are tender and the oatmeal has thickened to your liking. For a slightly chewier texture, cook for the shorter recommended time; for softer oats, let it simmer a bit longer. Finally, stir in the vanilla extract and remove from the heat. If you have a few extra minutes, cover the pot and let the oatmeal rest briefly to soften further. Serve warm, optionally topped with an additional spoon of peanut butter and dulce de leche, and perhaps a sprinkle of dark chocolate or chopped peanuts.

Ingredients

  • 1 cup (ab. 90 g.) old-fashioned / rolled oats (5-7 minute cooking time)

  • 1 and 1/2 cup to 2 cups (360 to 450 ml.) of water –  see notes

  • a good pinch of salt

  • 2-3 tbsp. (30-45 g.) peanut butter plus more, for topping – I used smooth peanut butter

  • 2 tbsp. (40 g.) dulce de leche plus more, for topping

  • 1 tsp. (5.5 ml.) vanilla extract

Directions

  • Add water and salt to a medium pot. Bring to a boil over medium-high heat.
  • Once boiling, lower the heat to medium-low and add in the oats, peanut butter, and dulce de leche.
  • Cook, stirring occasionally, until the oats have thickened up and are tender, about 3-5 minutes – depending on the recommended cooking time. The cooking time suggested in this recipe will result in a slightly chewy oatmeal. You can cook for a few minutes longer, if you prefer it softer.
  • Lastly, add the vanilla extract and turn off the heat. If you have time, cover the pot with a lid and let the oatmeal stay for a 5 minutes or so (this makes the oatmeal softer and somewhat lighter), but that’s optional.
  • Serve oatmeal with an additional spoon of peanut butter and dulce de leche. In addition, you can sprinkle with dark chocolate or chopped peanuts.

Notes

  • The standard ratio is roughly 1 cup of liquid per 1/2 cup of oats, resulting in quite thin porridge. Personally, I love to use less water for an extra thick consistency. Also, I used water, but milk is an excellent option for more delicate flavour and richer consistency. When using milk, I like combining ½ a cup of water and ½ a cup of milk.
