Hey folks – how are you doing? I hope this week has been treating you well so far.
I’ve got a nasty cold this week (feeling much better now but have not fully recovered yet.) So I am going to keep it short and simple this time.
Any celery lovers here? I have quite complicated relationships with celery. I cannot say I hate it, but it is not the produce you can find in our fridge often, either. Also, I am not a huge fan of celery in soups or other main dishes where it is cooked. On the other hand, I love its freshness and crunchiness when added in a salad. Just like in this Chicken Celery Grape Salad or Chicken Celery Prune Walnut Salad.
Celery Raisin Salad
This Celery Raisin Salad is super easy, healthy, juicy, and fresh, too. The addition of raisins adds a subtle sweetness while the yogurt dressing adds some protein.
It is very light, so serve it with a protein of your choice. Alternately, if you have any leftover chicken, shred it and add to the salad to make it more filling – and that could be already a light lunch or dinner. The addition of toasted nuts like walnuts or almonds would also be nice.
And if you are not fan of raisins, think of other substitutions such as dried apricots, prunes, currants – or maybe even a chopped apple or pear.

Celery is such an underused and underrated vegetable. I used to ignore it but now I love it. It’s incredibly versatile and has wonderful flavor and texture. I love this salad, Ben, and look forward to making it soon.
