This refreshing Rhubarb Mojito is made with just five ingredients – rhubarb syrup, mint, lime, white rum and soda water. Perfect for kicking off your summer season!
Hello folks! I am finally back!
First of all, thank you all for your kind birthday wishes!
Over three weeks off without blogging – I don’t recall when it happened last time!
In fact, we were returned from our Croatian trip on May 20th. But I didn’t have any strength to get back to the blog until today. Well, truth be told, I am still not 100% ready – just forcing myself! Don’t you think that every good vacation, especially those that involve travelling, require another vacation, to rest from the first one? :)
Our vacation was wonderful despite of many rainy days – beautiful country, impressive history and heritage, delicious foods, and many cats. That’s in a nutshell. Hopefully, I share some photographs within next couple of weeks.
Mojito Ideas
Refreshing mojito. What can be better on a hot sunny day? I’ve got a few on my blog:
Rhubarb Mojito
This refreshing twist on the classic Mojito uses rhubarb for fun fruity flavour and beautiful colour. This cocktail is super easy to make. Just please keep in mind that you will need to make rhubarb syrup in advance. And you will need only five ingredients: rhubarb syrup, fresh mint leaves, limes, white rum, and soda water (club soda)
Definitely, you will need the entire batch of the rhubarb syrup. The leftovers will stay fresh refrigerated, and you can utilize it for making lemonades, cocktails, or simply serving with pancakes, yogurt, or oatmeal.
Easy and so luscious!
I hope you like this cocktail, and you will give it a try soon. If you try it, let me know in this post or send me an Instagram message or share you photos adding the hashtag #havocinthekitchen.
Cheers!

Looks so refreshing, Ben! You know, I wasn’t aware that rhubarb syrup was a thing. Someone should market it, as it sounds amazing.
Welcome back, Ben! I’m sure you wish you were still on vacation. :-) We missed here, though! Looking forward to seeing the photos. This cocktail is such a good idea for this time of the year! I don’t think I’ve ever come across rhubarb in a mojito – but the flavors totally work together. Pass me one, please!
I’m so glad to see you back Ban and blogging again! I hope you had an amazing birthday and a well-deserved break. Taking time off is important to recharge and come back refreshed. It sounds like your Croatian trip was a memorable one, despite the rain. I can’t wait to see the photographs you’ll be sharing soon!
Such a pretty and delicious drink! I love how you garnished the drink with rhubarb peels.
Welcome back, Ben! Glad to hear that you had a wonderful trip — and this rhubarb mojito looks absolutely heavenly! I need to make rhubarb syrup ASAP!
