I have made quite a few cake bars this summer, and I think these are my favourite. Ground pistachios create an incredibly rich and moist yet fluffy crumb, while raspberries and white chocolate make the combination even more irresistible. So, without further ado, let’s dive into these raspberry pistachio cake bars with white chocolate!

What Are Raspberry Pistachio Cake Bars?

These raspberry pistachio cake bars fall somewhere between a traditional cake and the convenient format of dessert bars. While they are partly inspired by blondies, their finished texture is quite different.

So, what exactly makes them cake bars?

  • Blondie-inspired format. Like blondies, these raspberry pistachio bars are baked in a square pan and cut into individual portions. They are also buttery and rich.
  • Cake-like crumb. Unlike most blondies, they are not particularly dense, chewy, or fudgy. Instead, these raspberry cake bars have a noticeably fluffy and tender crumb.
  • Exceptional moisture. They are richer and moister than a typical simple cake. Ground pistachios, fresh berries, and white chocolate all contribute to this texture.
  • The best of both worlds. Essentially, you get the richness and convenient shape of dessert bars combined with the soft texture of pistachio raspberry cake.

Therefore, I would not describe this raspberry pistachio recipe as blondies. The distinctive fluffy crumb makes cake bars a much more accurate description.

There is quite a lot happening in these seemingly simple raspberry pistachio cake bars. Most importantly, ground pistachios, fresh raspberries, and white chocolate each play a different role in their flavour and texture.

  • Smoothness. The creamy chocolate contrasts with the fluffy pistachio crumb.
  • Richness. Its buttery character works particularly well with ground pistachios.
  • Sweetness. White chocolate balances tart berries, which means the cake batter itself does not need much sugar.
  • Texture. Larger chunks are far more noticeable than tiny pieces and create smooth pockets throughout the raspberry pistachio bars.
  • Balance. The chocolate effectively connects the rich pistachios with the brighter raspberry flavour.

As a result, these are not simply pistachio bars with raspberries and some chocolate added for good measure. White chocolate is one of the ingredients that makes the entire combination work.

These raspberry pistachio cake bars are ultimately all about contrast. The individual ingredients create a dessert that is rich and indulgent but still surprisingly fresh.

  • Pistachios. Finely ground pistachios form an important part of the crumb. You can also use some roughly chopped nuts for the top.
  • Fresh raspberries. They add tartness, fresh berry flavour, and juicy pockets. Their moisture level can vary, so particularly juicy berries may affect the baking time slightly.
  • White chocolate. Use roughly chopped chocolate and keep the pieces fairly large. This creates the smooth, creamy pockets that make these raspberry white chocolate cake bars particularly decadent.
  • Butter. Melted butter creates a rich base and works particularly well with the natural oils in the pistachios.
  • Light brown sugar. It adds sweetness and a little extra depth without overpowering the pistachio and raspberry flavours.

  • All-purpose flour. Combined with the ground pistachios, it gives the cake enough structure while keeping it tender.

  • Salt. It balances the sweetness and enhances the pistachio flavour. Adjust the amount if you are using salted pistachios.
  • Lemon zest. Optional, but a little zest can brighten the raspberry flavour without making this a lemon dessert.

Despite their rich appearance, these pistachio bars with raspberries rely on a relatively simple ingredient list. The secret is how the ground nuts, fresh fruit, and large white chocolate chunks work together.

How to Make Raspberry Pistachio Cake Bars

Making these raspberry pistachio cake bars is quite straightforward. You will need two bowls, a square baking pan, and a little care when folding in the berries.

First, whisk the melted and slightly cooled butter with the brown sugar, followed by the eggs. If using lemon zest or vanilla, add them at this stage. In another bowl, combine the flour, finely ground pistachios, baking powder, and salt.

Next, fold the dry ingredients into the wet mixture just until combined. The batter for these pistachio cake bars will be fairly thick and rich. Fold in most of the white chocolate, followed by the raspberries. Be gentle with the fruit so that you leave plenty of berries intact.

Finally, spread the batter evenly in the prepared pan. Scatter the remaining raspberries and white chocolate over the top, along with some roughly chopped pistachios, if desired. Bake until the edges and surface are set while the centre remains quite moist.

How to Know When Raspberry Pistachio Cake Bars Are Ready

Determining when these raspberry pistachio cake bars are ready can be a little tricky. In fact, their appearance may tempt you to leave them in the oven considerably longer than necessary.

When I first made this raspberry pistachio recipe, I expected the bars to need 40 minutes or even longer. After all, the batter contains ground nuts, fresh berries, and plenty of white chocolate. However, approximately 30 minutes turned out to be just right.

For my batch, I baked the bars for about 27 minutes. Then, I switched off the oven and left them inside for another 2–3 minutes with the door closed.

Instead of relying only on time, look for these signs:

  • Check the edges. They should look set and may begin to pull very slightly away from the sides of the pan.
  • Look at the surface. The top should appear set rather than looking like completely raw batter.
  • Expect a moist centre. The middle should be set but still look noticeably soft and moist. These are not dry, firm raspberry cake bars.
  • Be careful with the toothpick test. A tester can hit a raspberry or a pocket of melted white chocolate and come out very wet. Therefore, a perfectly clean toothpick is not necessarily the goal.
  • Watch the chocolate. Large pieces of melted white chocolate can easily look like underbaked batter while the bars are warm.
  • Consider your raspberries. Particularly large or juicy berries may release more liquid and require a few additional minutes.

Most importantly, do not try to bake away every sign of moisture. That can easily take these pistachio raspberry bars from exceptionally moist and fluffy to unnecessarily dry.

Of course, baking time will vary slightly between ovens. If you prefer a firmer, more traditionally cake-like crumb, you can also bake the pistachio cake bars for about 3–5 minutes longer.

Why These Cake Bars Are Better Chilled

Cooling is important for this raspberry pistachio dessert, but refrigeration makes an even bigger difference. I strongly recommend chilling the completely cooled bars for several hours before slicing.

There are a few reasons why:

  • The crumb sets. Ground pistachios create an exceptionally moist cake, so refrigeration gives the crumb time to become more stable without making it dry.
  • The chocolate firms up. Those large melted pieces of white chocolate reset into smooth, substantial pockets.
  • The berry moisture settles. Juices released by the raspberries have time to integrate into the surrounding crumb.
  • Slicing becomes easier. These pistachio bars with raspberries are quite soft at room temperature, particularly soon after baking.
  • The texture improves. Chilling emphasizes the contrast between the tender pistachio crumb, juicy fruit, and firmer white chocolate.

Personally, I think these raspberry white chocolate cake bars are particularly delicious straight from the refrigerator. They remain beautifully tender and moist, while the chilled chocolate gives each bite extra richness and texture.

Tips for the Best Raspberry Pistachio Cake Bars

This raspberry pistachio recipe is simple, but a few small details can make a noticeable difference. In particular, pay attention to the pistachios, berries, chocolate, and baking time.

  • Grind the pistachios carefully. Process them until finely ground, but stop before they become oily or start turning into pistachio butter.
  • Keep the chocolate chunky. Large pieces give the white chocolate raspberry bars their distinctive creamy pockets. Finely chopped chocolate will produce a different effect.
  • Use fresh raspberries when possible. They worked beautifully in the tested recipe and make it easier to control the amount of moisture in the batter.
  • Fold the berries gently. Some raspberries will naturally break, but keeping many intact creates more distinct pockets of fruit.
  • Do not overmix. Fold the flour and pistachio mixture into the wet ingredients only until incorporated. This helps preserve the tender crumb.
  • Do not automatically extend the baking time. A very moist-looking centre does not necessarily mean the raspberry pistachio cake is underbaked.
  • Remember that berries vary. Very juicy raspberries may require a little extra baking time, so use the visual cues above along with the suggested timing.
  • Chill before cutting. Let the cake cool completely first, then refrigerate it for several hours for cleaner slices and the best texture.

Storage and Serving

These pistachio cake bars with raspberries are particularly well suited to refrigeration. In fact, chilled is my preferred way to serve them.

Once completely cooled, transfer the bars to an airtight container or cover the baking pan well. Store them in the refrigerator to preserve their moist crumb and fresh raspberry flavour.

For serving, you have a couple of options:

  • Serve them chilled. This is my favourite option. The pistachio crumb remains moist and tender, while the white chocolate has a pleasantly firm, creamy texture.
  • Let them soften slightly. If you prefer softer white chocolate and an even more tender crumb, leave the bars at room temperature briefly before serving.
  • Cut them while cold. For neat squares, slice the raspberry pistachio bars directly from the refrigerator with a sharp knife.
  • Keep them simple. These bars already have plenty of flavour and richness, so they do not need frosting, glaze, or another topping.

And while these pistachio dessert bars are certainly decadent enough for a special occasion, I think their fresh raspberry flavour makes them equally lovely with an afternoon cup of tea or coffee.
