The peaches are cubed, the mozzarella is roughly torn or cut, and everything is tossed with fresh basil, olive oil, and optional balsamic before being generously piled onto two large pieces of toast. Of course, you can easily turn the same recipe into crostini. Simply use smaller slices of baguette and divide the topping among them.

Calling this peach and mozzarella toast would be perfectly accurate, too. Toast is simply the broader term and doesn’t carry the same traditional preparation or size associations.
Whether you call it toast with peach and mozzarella or peach bruschetta, the idea is essentially the same: crisp bread generously topped with a fresh mixture of ripe fruit, creamy cheese, herbs, and olive oil.
Ingredients You’ll Need for Peach Bruschetta with Mozzarella
Because this peach bruschetta with mozzarella and basil is so simple, the quality of the individual ingredients makes a noticeable difference.
- Peaches. Choose fragrant, ripe peaches that are naturally sweet but still firm enough to cube without falling apart. There is no need to peel them.

For this recipe, I particularly like fairly thick, large slices because we are making two substantial pieces of peach and mozzarella toast. A baguette works too, but its smaller slices naturally turn the recipe into crostini – a useful option when serving a larger group.
Possible Additions and Variations
This peach bruschetta with mozzarella is intentionally minimalist, but there are plenty of ways to build on the basic combination.
