Creamy Dessert Cocktail with Brandy and Halva in a coupe glass with a smooth, velvety surface and elegant presentation

Hey folks – I hope you all are doing well!

Today I’m sharing a rather unusual but surprisingly elegant dessert drink that brings halva into a completely different format. This idea actually came from my recent experiments with homemade halva (see my halva recipe), where I noticed how beautifully it softens and blends when still fresh. As a result, it naturally led to this smooth and satisfying halva cocktail. So, let’s dive into this Creamy Halva Brandy Cocktail.

Why You’ll Love This Creamy Halva Brandy Cocktail

  • Unique: A creative way to turn halva into a refined drink.
  • Creamy: A smooth, velvety texture without being overly heavy.
  • Balanced: Sweetness is softened by brandy and a pinch of salt.
  • Simple: No special equipment or techniques required.
  • Customizable: Easy to adjust strength, sweetness, and flavour.

Flavour and Texture Profile

This halva cocktail is creamy, smooth, and gently nutty, with a delicate sesame flavour that is not overpowering. At the same time, it remains pleasantly sweet, yet not overly rich.

In fact, the overall profile is somewhat reminiscent of an Irish cream-style drink, although lighter and more nuanced. Because halva brings both sweetness and texture, this dessert cocktail with cream feels cohesive and naturally balanced.

Ingredients for This Halva Cocktail

It’s easy to make this creamy dessert cocktail with just a few ingredients:

  • Brandy: Provides warmth, depth, and a smooth finish.
  • Tahini halva: The key ingredient, offering sweetness and sesame flavour. Use homemade halva for best result.
  • Cream (18%): Adds body and creates a silky texture.
  • Vanilla bean paste (optional): Enhances aroma and rounds out the flavour.
  • Pinch of salt: Balances sweetness and highlights sesame notes.

How to Make Creamy Halva Brandy Cocktail

  • Combine the halva and cream.
Place the halva in a mixing glass and gently press or muddle it with the cream until it softens and begins to dissolve.
  • Add the remaining ingredients. Add the brandy and optional vanilla, then continue mixing until smooth and cohesive.
  • Serve. Serve as is, or chill briefly in the fridge for about 10 minutes before serving.

Key Tips for Best Results

  • Why homemade halva works best: Homemade halva has a finer, more delicate structure and a cleaner flavour. In contrast, store-bought halva is often denser, slightly greasy, or gritty, which makes it harder to incorporate smoothly.
  • Use lightly set homemade halva: Halva that has rested for about 1 hour is ideal. At this stage, it is soft, delicate, and almost paste-like, which allows it to dissolve smoothly into the drink.
  • No need to fully mature the halva: Fully set halva becomes more crumbly and structured, so it does not blend as easily. Using it earlier ensures a smoother and more cohesive creamy brandy drink.
  • No ice recommended: Ice may cause the mixture to split or become uneven. Instead, chill the cocktail briefly in the fridge if needed.
  • No extra sweetener required: Halva already provides enough sweetness for a well-balanced halva cocktail.

Using Store-Bought Halva

If using store-bought halva, keep in mind that it is usually firmer and more compact, which makes it harder to incorporate smoothly. In many cases, it may not dissolve fully when mixed by hand, resulting in a slightly grainy or uneven texture. To improve the result, you can blend the halva with cream first and, if needed, strain the mixture. However, even with these adjustments, the texture may not be as smooth or delicate as when using freshly made homemade halva.

Can I Use Tahini Instead of Halva?

In theory, yes – you can approximate halva by combining tahini with a sweetener such as honey or maple syrup. However, this version has not been tested, so the texture and flavour may differ.

Unlike tahini, halva provides:

  • a slightly crumbly, structured base
  • a more developed, toasted sesame flavour

As a result, a tahini-based version may be smoother and less complex. If you decide to experiment, start with small amounts and adjust both sweetness and consistency carefully. And please let me know in the comment section your results.

Variations and Substitutions

Although this halva cocktail is already well balanced, you can easily adjust it:

  • Use rum instead of brandy: Creates a richer, slightly more caramel-like profile.
  • Add coffee liqueur: Introduces a deeper, more complex flavour.
  • Make it non-alcoholic: Replace brandy with milk for a softer dessert-style drink.
  • Add pistachios: Use as garnish for extra texture and visual appeal.

How to Serve This Halva Cocktail

This dessert cocktail with cream is best served simply:

  • In a small glass or coupe.
  • Slightly chilled, but without ice.
  • Optionally garnished with crumbled halva, chopped pistachios or a light dusting of cocoa.

Because the texture is naturally creamy, minimal styling works best.

Prep time

minutes

Ingredients

  • 1½ oz (45 ml) brandy

  • 1 oz (30 ml) cream (18%)

  • 30–45 g tahini halva (preferably soft and even better – homemade, lightly set). You can use Halva Recipe – A Simple Guide to Homemade Halva

  • â…› tsp vanilla bean paste (optional, just a tip of a knife)

Directions

  • Combine the base.
Place the halva in a mixing glass and gently mash or muddle it with the cream until it softens and begins to dissolve into a smooth mixture.
  • Add and finish.
Add the brandy and vanilla (if using), then stir or mix until fully combined and creamy. Serve immediately or chill in the fridge for about 10 minutes before serving.

Notes

  • Best texture: Use freshly made halva that has rested for about 1 hour. At this stage, it is soft and delicate, allowing it to dissolve easily and create a smooth, cohesive drink.
  • Do not over-mature the halva: If using homemade halva, don’t allow it to fully set as halva becomes more crumbly and structured, which makes blending less efficient and may leave small bits in the drink.
  • No ice recommended: Ice can cause the mixture to split or become uneven. For best results, chill briefly in the fridge instead.
  • Store-bought halva: Typically firmer and slightly gritty. For a smoother result, blend it with the cream first and, if needed, strain before adding alcohol.
  • Consistency adjustment: If the drink is too thick, add a small splash of cream. If too thin, increase the amount of halva slightly.
  • Sweetness balance: Additional sweetener is usually not needed, but you can add a small drizzle of maple syrup or honey if desired.
  • Cooking time does not include homemade halva.
