Hello, folks! How are you doing? I hope this week has been treating you well so far. I am doing all right, too, thanks for asking. But would it be strange to say that I am already ready for the weekend? Well, who am I kidding? I was ready for a new weekend on Monday at 6 am!

So, today, I will keep it simple and easy, just like this easy pancetta tomato pasta recipe.

Pasta with Pancetta, Tomatos, and Pine Nuts

This pancetta tomato pasta calls for only several simple ingredients and a few simple cooking steps.

First, you sauté shallots (or onion) and garlic with a little olive oil. Then you add pancetta and pine nuts and cook it for several minutes, until lightly browned. Lastly, tomatoes go in for another few minutes, until softened. As you can see, making the sauce is a matter of mere minutes. And while you are making the sauce, cook the pasta so both are ready simultaneously.

As I said, this is a super quick and easy recipe.

How to Customize This Recipe

You can easily customize this recipe, too.

Don’t have pancetta? A thick slice of bacon (preferably, not overly fatty) will work. For a healthier option, use lean cooked ham. Don’t have fresh cherry tomatoes? Use whole canned tomatoes instead. Don’t like or have pine nuts? Add other nuts (e.g., walnuts or almonds) or omit them completely.

Pasta with Pancetta, Tomatoes, and Pine Nuts is a quick and tasty meal that will be ready in 30 minutes or so. This is a perfectly easy recipe for busy weeknights or any special occasion.

Ingredients

  • 400 g. dried spaghetti – short-shaped pasta like penne or fusilli will also work

  • 1-2 tbsp. (15-30 ml.) olive oil

  • 150 g. pancetta, thickly sliced or cubed

  • 1-2 shallots or 1 small onion, thinly sliced

  • 2-3 garlic cloves, minced

  • 2-3 tbsp. (20-30 g.) pine nuts

  • a generous handful (about 300 g.) cherry tomatoes, halved if large

  • a handful of basil leaves

  • salt and freshly grated black pepper, to taste

Directions

  • In a large pan heat the olive oil over low-medium heat and cook the shallots and garlic until soft and fragrant, for about 2-3 minutes. 
  • Add the pancetta and pine nuts and cook for another few minutes, until the pancetta starts to brown. Season with a little salt and pepper.
  • Add the cherry tomatoes and sauté until they start to soften, about 5 minutes.
  • In a meantime, bring a large pot with well-salted water to a boil. Cook the pasta al dente, as per the package instructions. Reserve 1 cup (240 ml.) of  the pasta water then drain.
  • Add the drained pasta into the pan with the pancetta. Stir in the basil. Add some of the reserved pasta water and simmer for a minute or so. Try and season more, to taste. Enjoy!

  1. My son would love this pasta dish – easy to make, and so much flavor! Definitely going into the weekday rotation!

  2. What a lovely, colourful meal. I love that you used pinenuts in it too. I brought some back from Spain but it’s getting harder and harder to find authentic Spanish pinenuts, they all too frequently come from China and most recently Russia. I have a small stash that I have to make last until November.
