  • ½ cup (60 g) finely minced pistachios, mixed into the cheese to help thicken

  • ¼ cup (30 g) finely minced pistachios, for coating

  • ½ cup (65 g) dried cranberries, chopped

  • 1 to 2 tbsp. (20-40 g) honey, or adjust to taste

  • 1 tbsp. finely minced fresh rosemary

  • 1–2 tbsp. orange zest, finely grated

Directions

  • Finely chop the pistachios in a small food processor until they reach a coarse, crumb-like texture. Set aside some for mixing and some for rolling.
  • In a medium bowl, mix the softened goat cheese with minced rosemary, orange zest, honey, and the finely chopped pistachios until smooth. Fold in the chopped dried cranberries.
  • Chill the mixture for 30–60 minutes until firm enough to roll.
  • Scoop and roll into small balls (about 22–25 g each), then coat in additional finely chopped pistachios. Keep chilled until serving.
