Orange Pistachio Cake Bars with Lavender: Bright, Sunny, and Full of Flavour

These orange pistachio cake bars sit somewhere between a blondie and a simple snack cake. They are buttery and tender but not especially sugary, which lets the orange, roasted pistachios, and lavender come through clearly.

A Sunny Orange and Pistachio Combination

The strongest impression is citrus and nuts, with plenty of texture from roughly chopped pistachios.

  • Fresh orange zest. Use zest from one orange for a gentler aroma, or two for a much more pronounced orange flavour.
  • Roasted pistachios. I used roasted salted pistachios, which bring deeper nutty flavour and little crunchy pieces throughout the crumb.
  • A buttery base. Melted butter gives the bars richness without making them heavy or fudgy.

Orange, pistachio, and lavender create a combination that feels sunny and Mediterranean-inspired without making this a traditional regional recipe. The floral note supports the citrus rather than competing with it.

  • Lavender stays subtle. Culinary lavender gives these orange lavender cake bars a fragrant finish without making them taste perfumed.
  • Pistachio adds balance. The roasted nuts bring savoury depth and keep the floral element grounded.

  • Not classic blondies. Traditional blondies are generally sweeter, denser, and chewier; these pistachio orange blondies are lighter and more cake-like.
  • Similar idea, different result. If you want orange pistachio blondies but prefer a less sweet dessert, this version has similar flavours with a softer crumb.

That is why I prefer calling them orange pistachio cake bars, even though both names describe the general style reasonably well.

Ingredients You’ll Need For Orange Pistachio Cake Bars

The ingredient list is short, and each component has a clear purpose.

  • Unsalted butter. Melted butter creates a rich, tender base.
  • Light brown sugar. It adds gentle caramel notes without making the bars sugary.
  • Eggs. They bind the batter and support the soft cake-bar texture.
  • Orange zest. Use one or two oranges depending on how strongly you want the citrus to come through. I lean toward two for a more pronounced aroma.
  • Culinary lavender. It gives these pistachio lavender cake bars a restrained floral accent.
  • Roasted salted pistachios. Roughly chop them instead of grinding them. In these cake bars with roasted pistachios, the nuts should stay visible and provide texture.
  • All-purpose flour. Unlike my other pistachio cake bars, this recipe uses regular flour rather than ground pistachios for structure.
  • Baking powder and salt. A little baking powder provides lift, while added salt sharpens the orange and lavender flavours even though the nuts are salted.

How to Make Orange Pistachio Cake Bars

The method is straightforward, but a few small details help preserve the tender texture and clear flavours.

Build the Orange and Lavender Base

Start with melted butter that has cooled slightly. Whisk it with the brown sugar, then add the eggs and mix until smooth. Add the orange zest and culinary lavender so their aromas are dispersed through the wet mixture.

For a stronger citrus profile, use zest from two oranges. If you prefer a softer background note, one orange is enough.

  • Cool the butter slightly. Very hot butter can make the eggs harder to incorporate evenly.
  • Keep lavender restrained. It should be noticeable after baking but still secondary to orange and pistachio.

Fold in the Flour and Pistachios

Combine the flour, baking powder, and salt, then add the dry ingredients to the wet mixture. Fold only until no obvious dry streaks remain, then add the roughly chopped pistachios.

The pistachio pieces should stay fairly substantial. That visible nutty texture is one of the main differences between these bars and recipes made with ground pistachios.

  • Do not overmix. Excess mixing can make orange pistachio cake bars firmer than intended.
  • Keep the nuts chunky. Chopped pistachios give little roasted, salty bites throughout the crumb.
  • Season the batter. Do not omit the additional salt simply because the pistachios are salted.

Bake Until Just Set

Spread the batter evenly in a lined square pan and bake until the edges are lightly golden and the centre looks set. A tester should come out without wet batter, although a few tender crumbs are fine.

These bars are less sweet than conventional blondies, so they can dry out faster if left in the oven too long. Let them cool before slicing because the crumb becomes neater and more stable as it rests.

  • Watch the centre. It should look set rather than glossy or wet.
  • Do not overbake. A few moist crumbs are better than a dry bar.
  • Cool before cutting. The bars slice more cleanly once the crumb firms.
