Why You’ll Love This Sicilian Sweet and Sour Chicken (Pollo in Agrodolce)

  • Rustic elegance. A traditional Sicilian sweet and sour chicken that feels both homey and refined.

  • Mediterranean depth. Raisins and pine nuts add authentic character.

What “Agrodolce” Means in Italian Cooking

In Italian, agro means sour and dolce means sweet. The term describes a classic sweet-and-sour preparation found throughout southern Italy, especially in Sicily. You’ll see agrodolce used for vegetables, fish, and meats — always built on a careful balance of vinegar and sugar rather than a thick or syrupy sauce.

In Sicily, this flavour profile often includes raisins and pine nuts, reflecting the island’s layered Mediterranean culinary history.

Sicilian Sweet and Sour Chicken: Flavour and Texture Profile

This Sicilian sweet and sour chicken is savoury first. The olive oil and properly browned chicken create depth, while onions soften into the sauce and provide natural sweetness. The vinegar brings brightness, and a modest amount of sugar rounds it out rather than making it sweet.

Raisins and pine nuts integrate into the sauce, adding gentle contrast and subtle texture. The final result is glossy and lightly reduced, coating the chicken without becoming sticky or heavy.

Sicilian Sweet and Sour Chicken (Pollo in Agrodolce): Ingredients

To prepare this Sicilian sweet and sour chicken, you’ll need a handful of essential ingredients that define authentic Pollo in Agrodolce, along with a few traditional additions that give it its distinctive Mediterranean character.

Pollo in Agrodolce: Canonical Ingredients

  • Bone-in chicken. Thighs or drumsticks are ideal, as cooking on the bone builds flavour and keeps the meat tender while the sauce reduces.
  • Extra virgin olive oil. This dish is olive-oil based, not butter-based, which gives it its unmistakable Italian identity.
  • Onions. Thinly sliced and gently softened, onions form the body of the sauce and provide natural sweetness.
  • White wine vinegar and sugar. The defining agrodolce combination. The vinegar should be bright but not sharp, while the sugar softens the acidity rather than making the dish sweet.
  • Dry white wine. Used to deglaze the pan and add subtle depth and balance.
  • Salt and freshly ground black pepper. Simple seasoning allows the sweet-and-sour profile to shine.

Traditional Sicilian Additions

  • Dark raisins. They add gentle sweetness and integrate seamlessly into the savoury sauce without overpowering it.
  • Pine nuts. Provide delicate richness and subtle texture that complements the raisins beautifully.
  • Bay leaf. A quiet aromatic note that supports the savoury base without dominating.

Acceptable Variations

  • Honey instead of sugar. Produces a slightly softer, rounder sweetness.
  • Red wine vinegar instead of white. Adds deeper acidity and colour.
  • Boneless chicken thighs. Less traditional but workable if preferred.
  • A small splash of light stock. Helpful if additional moisture is needed during simmering.

Not Traditional (But Sometimes Seen)

  • Heavy tomato-based sauce. Authentic chicken agrodolce is not tomato-driven.
  • Cornstarch-thickened glaze. The sauce should reduce naturally.
  • Strong herbs such as rosemary or oregano. These shift the flavour profile away from classic Sicilian sweet and sour chicken.

How to Make Sicilian Sweet and Sour Chicken

To prepare this Pollo in Agrodolce, focus on proper browning and gradual reduction for the best flavour.

  1. Pat the chicken dry and season generously with salt and pepper. Brown deeply in olive oil over medium heat, then remove and set aside.
  2. In the same pan, cook sliced onions with a pinch of salt until softened and lightly golden. Add pine nuts and soaked, drained raisins during the final minutes.
  3. Deglaze with dry white wine and let it reduce by about half.
  4. Stir together vinegar and sugar, add to the pan, and simmer briefly to soften the sharpness.
  5. Return the chicken and any juices to the pan. Add a bay leaf. If needed, add a small amount of water or light stock to create a shallow sauce.
  6. Cover partially and simmer gently for 30–40 minutes until the chicken is tender.
  7. Uncover during the final minutes and allow the sauce to reduce until glossy and lightly thickened. Remove the bay leaf before serving.

The sauce should coat the chicken, not pool excessively.

Serving Suggestions

Serve this Italian sweet and sour chicken warm or at room temperature. It pairs beautifully with crusty bread, simple roasted potatoes, or soft polenta.

Because Pollo in Agrodolce improves after resting, it is ideal for entertaining or preparing earlier in the day. A dry white wine or light-bodied red complements the balanced sweet-and-savoury profile.

  1. Unlike Tandy, I love the raisins in this dish — that is much of the point of dishes like this. This is another Mark and I will be trying. Do you know from what region of Sicily this dish comes? Just curious, as I have family from there.

  2. Sounds delicious Ben, tho i do prefer sultanas to raisins :) But sweet and sour is a great thing! I like thighs but hubby won’t go for the bone-in, so boneless it is!
