Although the holidays are winding down, this post marks my last recipe of 2025, and it’s a perfect last-minute idea for a New Year’s Eve celebration.

For example, I made this crostini alongside my turkey chestnut cranberry flatbread and leftover turkey flatbread with caramelized onions, cranberry and brie on the same day. How to Make Cranberry Chestnut Brie Crostini

To make cranberry chestnut brie crostini, start by brushing sliced baguette with olive oil and toasting in a 400°F (200°C) oven for about 6–8 minutes, until lightly golden. Remove from the oven, then arrange the caramelized onions, cranberry sauce, slices of Brie, chopped chestnuts, prosciutto, and fresh rosemary and thyme on each crostini. Return to the oven and bake for a few more minutes, just until the Brie has softened. Finish with a sprinkle of orange zest and additional fresh herbs before serving.

Ingredients

  • Caramelized Onions:
  • 1 medium onion, sliced

  • 1 tbsp (15 ml) olive oil

  • 1/2 (7.5 g) butter

  • Cranberry Chestnut Brie Crostini:
  • 1/2 bag uette (about 250 g), sliced into 12–16 pieces

  • 1 tbsp . (15 ml) olive oil, for brushing

  • 1/3 cup (80 ml) homemade cranberry sauce like Festive Cranberry Sauce with Orange Liqueur

  • 100-125 g Brie, sliced or torn into small pieces

  • 1/2 cup (50 g) roasted and peeled chestnuts, crumbled

  • 4 –5 slices prosciutto (about 75 g), torn into smaller pieces

  • 1/2 tsp . minced rosemary

  • 1/2 tsp . thyme leaves

  • 1/2 tsp . finely grated orange or clementine zest, for garnish

Directions

  • Start by caramelizing the onions. Heat the olive oil and butter in a heavy-bottomed skillet over low-medium heat. Add the sliced onion and cook slowly for 12–15 minutes, stirring occasionally, until soft, and lightly caramelized. Finish with a small splash of balsamic vinegar and set aside.
  • Preheat the oven to 400°F (200°C). Brush the baguette slices lightly with olive oil and in the preheated oven for 6–8 minutes, until lightly golden.
  • Remove from the oven, then top each slice with the caramelized onions, cranberry sauce, Brie, chestnuts, thyme, and rosemary; return to the oven and bake for about 4-5 minutes until the Brie has softened.
  • Finish with orange zest and extra fresh herbs, if desired, then serve warm. Enjoy!
