Hey, folks – I hope you’re all doing well.

This week I’m sharing something I honestly never expected to enjoy quite this much: gluten-free rye cookies. I’ve always liked rye for savoury recipes, but I was surprised by how delightful rye can be in a cookie -slightly nutty, pleasantly earthy, and absolutely wonderful with warm spices and clementine. I was also a little concerned the texture might lean underbaked, as gluten-free cookies sometimes do, but these turned out beautifully crisp and perfectly tender. So, let’s dive into these gluten-free rye shortbread cookies with clementine and cardamom.

Why You’ll Love This Gluten-Free Rye Shortbread

  • Nordic-inspired: Earthy rye and cardamom bring Scandinavian holiday charm.
  • Rustic yet festive: The rye flour gives these cookies a wholesome, old-world character, while the citrus and spices make them feel beautifully seasonal.
  • Naturally gluten-free: Crisp, tender shortbread without any need for gluten.
  • Warm and aromatic: Cardamom, cinnamon, and nutmeg create a cozy winter flavour.
  • Simple: Melted butter dough – no mixer required.
  • Beautiful for gifting: Pretty, fragrant cookies perfect for holiday boxes.

Flavour and Texture Profile

These gluten-free rye shortbread cookies offer a lovely balance of nutty, earthy rye, warm cardamom, and bright citrus. They bake with a delicate crispness, especially around the edges, while the centers stay lightly tender depending on bake time. Brown sugar adds caramel notes, clementine zest lifts the overall flavour, and the spices create a warm, seasonal finish.

Ingredients You’ll Need for This Recipe

These ingredients build the warm, earthy sweetness that defines this gluten-free rye shortbread.

  • Rye flour (gluten-free): Creates a nutty, earthy base.
  • Melted butter: Provides richness and keeps the texture tender.
  • Brown sugar: Adds sweetness and caramel-like depth. I used light (golden) brown sugar.
  • Honey: Enhances moisture and flavour.
  • Clementine zest: For brightness and citrus aroma.
  • Cardamom: Key Nordic spice – warm and floral.
  • Cinnamon: Adds warmth and complements the cardamom.
  • Nutmeg: A subtle seasonal note.
  • Vanilla (optional): Rounds the flavour.
  • Salt: Balances sweetness and enhances the rye.

How to Make Gluten-Free Rye Shortbread Cookies

This gluten-free rye shortbread dough will be slightly sticky yet easy to work with. Combine melted butter, brown sugar, honey, clementine zest, cardamom, cinnamon, nutmeg, and a small pinch of salt. Mix in the rye flour until a soft dough forms. Chill the dough for at least 20–30 minutes – this helps the rye hydrate, firms the dough, and makes shaping easier.

Shape or scoop the dough, arrange on a baking sheet, and bake slightly longer than traditional shortbread cookies. Gluten-free rye tends to need an extra minute or two: about 14 minutes for softer cookies or 16 minutes for crisp ones. Cool on a rack before serving.

  1. I have never been a huge fan of rye flavor, but I think I have to give these a try as they are so beautiful and I think the cardamom will elevate them to a much higher level. These are, for sure, not your run of the mill deli rye bread.

  2. My daughter made me a batch of brown butter rye chocolate chip cookies once, and I have loved rye in sweet bakes. Cardamom also happens to be my current favorite spice, and it’s magical with cinnamon. So I am drooling at the flavor profile of these cookies, Ben!

  3. Love this kind of cookies…simple, but so good thanks to the use of quality ingredients and so versatile too.

These would be perfect for my gf guests! The flavor combination is so unique too — definitely need to incorporate more rye in my baking, thanks for sharing!
