Hello, folks! How are you doing? I hope this week has been treating you well so far and that you are enjoying the remaining part of August (how come?).

This summer, I’ve been posting many lavender recipes on this blog. And you know what? I will probably continue this for a while. I hope you don’t mind. Today, I am bringing something unique and delicious, featuring the combination of salty feta, rich and tangy sour cream, and sweet notes of lavender. This Lavender Feta Dip or Spread, to be precise.

Cheese and Lavender Together?

I have already mentioned the book “Cooking with Lavender” by Nancy Baggett on many occasions. It is the only book I have tried multiple recipes from and shared the results here. Perhaps the best part of the book is its section on culinary pairings. Before this book, I was not aware that lavender goes well with so many sweet and savoury ingredients.

So, our today’s combination is cheese or, specifically, feta cheese.

Ingredients for Lavender Feta Dip

To make this Lavender Feta Dip, you will need only four simple ingredients:

  • Feta – the base ingredient of this recipe.
  • Sour cream – adds richness and a tang, as well as balances out the saltiness of feta. To achieve the consistency of thick spread, use less sour cream and add more if you prefer a thinner consistency. I suggest using full-fat sour cream (usually, 18%) for an extra indulgent and rich result, although lighter versions will also work.
    • Greek yogurt – use it instead of sour cream for a healthier and lighter dish and for added protein.
  • Dried lavender buds – just a little for a subtle hint; it’s always better to use less than more when it comes to lavender. Be sure to mince or rub it, so the flavour is distributed evenly.

Possible Additions and Variations

While this Lavender Feta Spread is already delicious, there are many ways to make it even more exciting:

  • Add lemon zest for freshness and a bright aroma
  • Stir in a little (just a spoonful) honey for a delicate sweet and savoury combination.
  • Toss in other fresh herbs like thyme or chives; these two go particularly well with lavender.
  • Add a little crushed black or pink peppercorns or even minced jalapeno for a spicy kick.

How to Enjoy Lavender Feta Dip

  • As a dip for your vegetables or crackers. Think carrots, cucumbers, or radishes to serve with it. As for crackers, look for those containing less salt because the dip is already quite salty.
  • On a toast or sandwich.
  • As a side dish / sauce with your grilled or roasted vegetables, meat, or fish. Oh, I love the combination of potatoes and feta!

Ingredients

  • 1 cup (150 g.) feta, crumbled

  • 1/2 cup (120 g.) sour cream, preferably full fat
    or more, for a thinner version

  • 1/2 tsp. dried lavender buds, minced or rubbed

Directions

  • In a bowl, combine the crumbled feta, sour cream, and minced lavender. Blend using an immersion or regular blender, until the desired consistency is reached; depending on the texture of your feta, it may not be possible to achieve a perfectly smooth consistency. Try and add more lavender or sour cream as desired.
  • Transfer any leftovers in an air-tight container, preferably glass, refrigerate, and consume within 3-4 days.
