This raw beet salad sounds like a refreshing and nutritious option that’s full of texture and flavor. I love how easily it can be customized with different herbs, nuts, or even a touch of sweetness like honey or apple. Letting it chill for a while to enhance the flavors is a great tip—definitely trying this soon!
I do love beetroots, but I’ve never tried them raw before. This recipe seems super easy to make and the combination of pumpkin seeds and herbs sounds perfect.
What a great recipe for a refreshing spring salad. Beets are just starting in our market (some weeks ther are there, some not). I look forward to trying this. Oh, and can we talk beautiful color???
Beetroot is a treat for me as I have kidney stones. I will try this when they are in season.
Still can’t persuade my husband to eat beet…it looks so vibrant, beautiful and healthful!
I’ve never tried raw beets, but this salad looks so tasty! Will have to give it a try!
What an absolutely gorgeous salad, such a colourful treat. I’m sure you’re having really awful stormy weather as we are in Toronto and this type of food really brings the happiness back. I love uncooked beets too, just have to remember what the result is the next day, I always scare myself a bit!!! The addition of the pumpkin seeds are a nice textural contrast.
Interesting! I don’t think I’ve ever seen raw beets in a salad like this. What a fun idea. I’m personally not a fan of beets, but Laura does love them. I could also see a few pieces of shredded beets working well as a garnish on a leafy salad…or perhaps soup!? Good idea! And freezing rain!? It’s too late in the year for that!!
We love beetroot, but I don’t think I’ve ever made a salad with it raw. Love this idea!! Stay warm, my friend!
I don’t think I’ve ever had a raw beet! Let alone a salad made of them! It sounds fantastic !
