Ingredients

  • Salad:
  • 1/2 cup (95–100 g) uncooked farro

  • 1/2–2/3 cup (75–100 g) fresh blueberries

  • 2–3 cups leafy greens such as arugula, spinach, or mixed greens (50–80 g)

  • 4–5 slices prosciutto (40–60 g), torn into smaller pieces

  • Dressing:
  • 1 tbsp (15 ml) maple syrup

  • 1 tsp (5 ml) olive oil

  • juiceJuice of 1 lime (about 2 tbsp / 30 ml)

  • Pinch of salt

Directions

  • Cook the Farro
    Cook the farro according to package directions. Generally, combine 1 part farro with about 3 parts water, bring to a boil, then reduce the heat and simmer until tender but still pleasantly chewy, about 20–40 minutes depending on the variety. Drain well and allow to cool.
  • Prepare the Dressing
    In a small bowl, whisk together the maple syrup, olive oil, lime juice, and salt until combined.
  • Assemble the Salad
    Combine the cooled farro, blueberries, and greens in a large bowl. Add the dressing and toss gently until evenly coated.
  • Serve
    Divide between serving plates and arrange the prosciutto on top. Serve immediately.

Notes

  • Serves 2 as a light main course or 4 as a side salad.
  • The salad can be assembled several hours ahead and refrigerated.
