If you have been following Havoc in the Kitchen for a while, you probably know I enjoy experimenting with lavender beyond desserts and cocktails. These cookies are another example of how well its floral character can work in savoury recipes, particularly when paired with cheese and herbs. So, let’s dive into!
Savoury Lavender Recipes and Flavour Pairings
Lavender is probably best known for its use in sweet recipes, from cookies and cakes to ice cream. However, its aromatic profile is also surprisingly versatile in savoury cooking.
The key is choosing ingredients that complement its herbal character while keeping the floral notes under control. Rich, salty, earthy, and gently smoky flavours are particularly useful.
Lavender can work beautifully with:
- Potatoes. Try a small amount with roasted or pan-fried potatoes, particularly alongside rosemary, thyme, garlic, or Herbes de Provence.

- Chicken. This is one of my favourite savoury lavender pairings. Herbs, garlic, lemon, honey, and mustard can all work beautifully with both chicken and lavender.

- Cheese. Rich and salty cheeses provide a strong counterpoint to lavender. That contrast is exactly what makes savoury cheese cookies with lavender work so nicely.
- Butter. Perfect for compound butter.
- Savoury baking. Bread, focaccia, biscuits, crackers, and other cheese-based bakes can all handle a subtle amount of lavender.

Depending on where you live, you might reasonably call these savoury cookies or biscuits. I use cookies because that description makes the most sense for their small, rolled-and-cut format, particularly for a North American audience.
And while they may look somewhat like cheese crackers, the texture is different. These savoury cheese cookies with lavender are thicker, richer, and more tender rather than thin, dry, and snappy.

These cookies use the same general cheese-cookie idea as my chive variation, but the flavour profile is quite different. Here, lavender works together with herbs and smoky spices rather than fresh chives.
A Subtle Floral Aroma
Lavender can easily become dominant, so restraint is important. In these savoury cheese cookies with lavender, you can keep the floral note quite delicate or make it more pronounced depending on your preference.
The aroma should complement the cheese rather than cover it.
Herbes de Provence Complements the Lavender
Herbes de Provence is a natural partner for lavender because it connects those floral notes with more familiar savoury herbs.
- More herbal. The seasoning makes the overall profile feel savoury and balanced.
- More complex. Instead of tasting distinctly of lavender, the cookies develop several aromatic layers.
- Naturally complementary. The combination works particularly well with cheese and butter.
Smoked Paprika and Chipotle Add Contrast
Smoked paprika and a little chipotle take the flavour in another direction. They add warmth and smokiness, which contrasts beautifully with the lavender.
The chipotle does not need to make the cookies particularly hot. A little warmth is enough to keep the floral character from becoming too prominent.
Cheese Remains the Main Flavour
These are cheese cookies first. Lavender is an accent.

You need only a relatively short list of ingredients for these savoury cheese cookies with lavender. Since the seasonings are quite aromatic, each one has a distinct role.
- Cheese. Use a medium-hard or semi-hard cheese that grates well. Cheddar, Gouda, Monterey Jack, Gruyère, or a combination will work.
- Butter. It should be very soft so it combines smoothly with the cheese and egg.
- Egg. Helps bind the dough and contributes to its tender structure.
- All-purpose flour. Provides enough structure for rolling and cutting without making the cookies dry.
- Culinary lavender. Use dried culinary-grade lavender buds. Their strength varies considerably, so adjust the quantity cautiously.

How to Use Lavender in Savoury Recipes
Cooking with lavender is mostly about controlling its intensity. While some savoury ingredients are forgiving, too much lavender can quickly overwhelm everything around it.

- For a subtle hint. Use 1/2 tsp dried culinary lavender buds.
- For a clearer lavender aroma. Increase the amount to about 2/3 tsp.
- For a pronounced flavour. You can use up to 1 tsp, but proceed cautiously.
Importantly, these quantities refer to whole buds before you crush or mince them.
Measure First, Then Crush
Measure the whole dried buds first. Then rub them between your fingers or finely mince them before incorporating them into the dough.
Breaking up the buds helps distribute their aroma more evenly. It also means you are less likely to encounter a concentrated piece of lavender in one bite.
Remember That Lavender Varies
There is no universal intensity for dried culinary lavender. Variety, age, quality, and storage can all affect its aroma.
That is why I would be particularly careful with the full 1 tsp in these savoury cheese cookies with lavender. If your lavender is exceptionally fragrant, a smaller quantity may already provide plenty of flavour.
When in doubt, start conservatively. The goal is a pleasant herbal-floral aroma, not a perfumed cookie.

How to Make Savoury Cheese Cookies With Lavender
Start by combining very soft butter, shredded cheese, and the egg. Stir in the lavender, Herbes de Provence, smoked paprika, chipotle, icing sugar, and salt, then gradually incorporate the flour. The finished dough should be soft and pliable rather than dry.
Chill the dough briefly before rolling. Roll it on a lightly floured surface, cut it into your preferred shapes, and transfer the cookies to parchment-lined baking sheets. Brush with egg wash and bake until nicely golden.
Let the savoury cheese cookies with lavender cool for a few minutes on the baking sheet before transferring them to a rack. They will firm up as they cool while retaining their tender texture.
Tips for the Best Lavender Cheese Cookies
The dough itself is straightforward, but a few details will help preserve both the texture and the balanced lavender flavour.
- Use culinary lavender. Lavender intended only for decorative or fragrance purposes is not suitable for cooking.
- Be conservative at first. If you do not know how potent your lavender is, 1/2 tsp is a sensible starting point.
- Measure before rubbing. The suggested lavender amounts refer to whole buds, not already crushed lavender.
- Distribute it well. Rub or finely mince the buds so the lavender is spread throughout the dough.
- Keep the dough soft. Add only enough flour to make it manageable. Too much can produce dry, crumbly cookies.
- Chill before rolling. A short rest firms the butter and makes the dough considerably easier to handle.
- Roll evenly. Similar thickness helps all the cookies bake at approximately the same rate.
- Watch the colour. Baking time can vary somewhat with cookie size, thickness, and cheese. Nicely golden tops and edges are a better guide than the clock alone.
