Ingredients

  • 1 tbsp. (15 g) butter
    may need a little extra

  • 1 tbsp. (15 ml) extra virgin olive oil
    may need a little extra

  • 1 lb. (45o g) skillet gnocchi

  • 7-9 sage leaves, sliced or chiffonade

  • 1/4 to 1/2 tsp. smoked paprika

  • a pinch of salt and pepper, to taste

Directions

  • Preheat a large pan or skillet over medium heat and add butter and olive oil.
  • Add the sage and cook for 1 minute until fragrant.
  • Add the gnocchi in a single layer and season with salt and smoked paprika and let them cook undisturbed for a few minutes until the bottoms are golden and crisp. Gently toss or stir to brown the other sides. If they look a little dry, add a little more (about 1 tablespoon) of butter or oil.
  • If you are using regular gnocchi, first cook them in salted boiling water for 1-2 minutes, just until they float to the top (about 1–2 minutes). Then drain and let them dry slightly, after that proceed to the step one. Enjoy!
