Skillet Gnocchi with Ham and Tomatoes

As I’ve already said, this ham tomato skillet gnocchi is a super easy and quick dish that will only require about 20 minutes from start to finish.

To make this dish, you will need so-called skillet gnocchi, onions, cherry tomatoes, ham, herbs, and spices. Plus, some oil and butter.

Skillet Gnocchi v. Regular Gnocchi

Both are potato gnocchi. However, skillet gnocchi skips the boiling step and is cooked in a skillet, resulting in a crispy browned exterior and a creamy tender interior. Regular gnocchi are boiled in water until they float and are known for their soft, pillowy texture. 

For this recipe, look for store-bought gnocchi labelled as “skillet”. If not available, you can use traditional gnocchi. In this case, I would recommend boiling them first, then draining and adding them to the pan to brown and crisp up a bit. The texture will be slightly different – softer – yet they will taste as good as skillet gnocchi.

This ham tomato skillet gnocchi recipe is an easy, quick, and tasty meal that will be ready in less than 30 minutes. Made with only several simple ingredients, the recipe’s flavour profile will not disappoint you!

Ingredients

  • 1 lb. (450 g.) store-bought gnocchi – I used “skillet” gnocchi that does not require boiling, but you can use regular, too

  • 1 tbsp. (15 ml.) olive oil

  • 1 tbsp. (15 g.) butter

  • 2-3 shallots, minced – or a small regular onion, preferably sweet variety

  • about 150-200 g. lean cooked ham, cubed

  • a large handful (250-300 g.) cherry tomatoes, halved if necessary

  • salt, to taste

  • 1 tsp. smoked paprika

  • a pinch of chipotle

  • a handful of basil leaves

Directions

  • For “Skillet Gnocchi”
  • In a large skillet, heat the oil and butter over low-medium heat and cook the shallots, for a couple of minutes, or just until soft and fragrant.
  • Add the ham and cook for 2-3 minutes, until lightly browned.
  • Add the tomatoes and cook few minutes, until start softening.
  • Increase heat. Add the skillet gnocchi and cook 5-7 minutes, stirring occasionally, until the gnocchi start turning nicely golden (be sure to check the recommended cooking time on the package. Time could be slightly longer depending on how much juice tomatoes have released.) Season with salt, smoked paprika, and chipotle. Stir in the basil and serve immediately.
  • For Regular Gnocchi
  • Cook the gnocchi in boiling salted water, according to the package info; this should take about 2-4 minutes or so – until the gnocchi are floating on the top. Drain.
  • In a meantime, proceed with making the sauce as steps 1, 2, and 3 for the “skillet gnocchi”.
  • When the onions, tomatoes, and ham are ready, add the drained gnocchi and cook them over higher heat for a few minutes. Please note regular gnocchi will not be as crisp and browned as the skillet gnocchi.
