  • 1 lb. (45o g) skillet gnocchi

  • 1 tbsp. (15 ml) extra virgin olive oil
    may need a little extra

  • 1-2 tbsp. (15-30 g) butter

  • 1 large onion, thinly sliced

  • 7–8 fresh sage leaves
    or more, to taste

  • 1/2 to 1 tsp. finely chopped fresh rosemary

  • 100 g cooked chestnuts, crumbled – I used roasted and peeled vacuum-packed

  • a few generous gratings of ground nutmeg

  • a generous pinch of smoked paprika

  • salt, to taste

  • 1–2 tbsp. (15-30 ml) brandy (optional)

  • clementine zest, to garnish

Directions

  • Heat olive oil in a wide skillet over medium heat. Add the sliced onion and cook for about 10 minutes, stirring occasionally, until soft and lightly caramelized.
  • Add butter, sage, rosemary, and cooked chestnuts; cook for about 2 minutes, until fragrant.
  • Add skillet gnocchi, season with salt, nutmeg, and smoked paprika, and cook until golden and crisp, tossing gently, about 4-5 minutes
  • Deglaze with a small splash of brandy if using, let it cook off, then finish with clementine zest and serve immediately.
  • Tip – Using Regular Gnocchi:
    If using regular potato gnocchi, boil them first until they float, drain well, then add to the skillet and pan-fry until lightly crisp before proceeding with the seasoning and brandy. Enjoy!
