Ingredients

  • 4 cups (960 ml) water

  • 2 –4 clementines, thinly sliced

  • 4 –6 whole cloves

  • 1 c innamon stick

  • 1 small sprig fresh rosemary (optional)

  • 1 –4 black tea bags or 1–4 tsp loose black tea – See Notes

  • honey, to taste at the end

  • 1-2 tbsp (15–30 ml) brandy, rum, or triple sec (for serving), optional

Directions

  • Add the water, clementines, cloves, cinnamon stick, and rosemary (if using) to a saucepan. Bring to a gentle simmer and cook for 5–7 minutes. Add the tea bags or loose tea during the last 1–2 minutes, then remove from heat and strain.
  • Stir in honey to taste just before serving. Serve hot, with a splash of brandy, rum, or triple sec if desired.

Notes

  • Use 1–2 black tea bags for a light, citrus-forward drink or 3-4 bags for a strong black tea-forward flavor.
  • 1–2 tsp (2–4 g) loose black tea for a lighter, citrus-forward drink or 3–4 tsp (6–8 g) for a more pronounced black tea flavour.
