Hey folks – I hope you all are doing well!

As the days turn cooler, apples are appearing everywhere. They are lovely in pies and crisps, but they can also make a seasonal drink feel a little more substantial.

At the bottom of the glass, you’ll find a small surprise: diced apples gently simmered with honey, sage, cinnamon and lemon. Pour the cider and dark spiced rum over top, then enjoy the drink and the soft, syrupy apples together. It has the spirit of a cozy fall cocktail, with a spoonable apple treat. So, let’s dive into this cozy apple cider cocktail with honey-caramelized apples and sage!

Apple Cider Cocktail with Honey, Sage & Rum: Cozy Apple Cider Cocktails for Chilly Autumn Days

When Late Summer Meets Fall

When the last of summer meets the first flavours of autumn, this apple cider cocktail feels right at home: seasonal and comforting, yet fresh and fruit-forward.

The caramelized apple topping makes it different from a straightforward cider drink: you get tender pieces to enjoy as you sip.

Apple Cider and Dark Spiced Rum

Apple and rum are natural companions. Cider brings bright fruitiness, while dark spiced rum adds deeper notes of baking spice and molasses. Together, they make a balanced apple cider rum cocktail.

Use approximately 250–300 ml cider and 1–2 tablespoons dark spiced rum. These are working amounts, so adjust the rum to taste. Start with the smaller amount if you prefer the apple to lead, or add a little more for a stronger spiced-rum presence. The result is a spiced rum apple cider with plenty of apple character.

Honey, Sage and Cinnamon: An Unexpected Seasonal Trio

Honey sweetens the apples and helps create the glossy syrup that settles at the bottom of the glass. Sage brings an earthy, savoury edge, while a pinch of cinnamon adds a gentle autumn note. A little lemon keeps the sweetness in check and brightens the fruit.

Fresh sage is aromatic, so a few leaves are enough to give this with sage and spiced rum a subtle herbal character without taking over the apple flavour.

Apple Cider, Rum & Caramelized Apples: A Cocktail with a Little Dessert on the Side

The caramelized apples are the feature I would not skip. Simmer them briefly with honey and seasonings, just until tender and glossy. Keep some texture rather than cooking them into a purée. Their syrup sweetens the cider, while the fruit makes each glass feel like a tiny dessert.

Spoon the apples and syrup into each glass first. This makes the caramelized apple cocktail feel playful and more special than a standard mixed drink.

Ingredients You’ll Need for This Apple Cider Cocktail with Spiced Rum and Caramelized Apples

This honey apple cider cocktail gets its sweetness from the fruit and honey, balanced by cider and rum.

  • Apple. Choose one medium tart apple, about 170 g. A firmer variety will hold its shape better during the short simmer.
  • Honey. Two tablespoons sweeten the apple and form the glossy syrup. Its floral notes also work nicely with sage.
  • Fresh sage. A few leaves add an earthy herbal note. Sage can be assertive, so there is no need to use a large handful.
  • Cinnamon. A pinch is enough to bring a gentle baking-spice flavour.
  • Lemon. A small squeeze balances the honey and keeps the apple mixture lively.
  • Apple cider. Use approximately 250–300 ml. Choose a cider with a clear apple flavour and moderate sweetness.
  • Dark spiced rum. Start with 1 tablespoon and add more to taste, up to approximately 2 tablespoons.

Possible Variations

Although this cocktail is tasty as it is, there’s a plenty of room for an experiment:

  • Maple syrup. Replace some or all of the honey with maple syrup for a deeper, woodsy sweetness.
  • Pear. Swap part of the diced apple for pear, or use an apple-pear cider for a softer fruit profile.
  • A different spirit. Bourbon or brandy would bring a different character; dark spiced rum remains the version used here.
  • Flavoured cider. Apple-pear or lightly spiced cider can add another layer. Check the sweetness before adding extra honey.
  • Vanilla. A small splash of vanilla extract could complement the honey and caramelized fruit.

Choosing the Best Apple Cider

Choose cider with a clear apple flavour and moderate sweetness. The honeyed apples already add sweetness, so a balanced cider gives you more control.

  • Fresh, unfiltered cider. Usually fuller-bodied, with a pronounced apple flavour.
  • Filtered apple cider. A clearer, lighter-tasting option.
  • Apple-pear cider. A fruitier alternative with a softer pear note.
  • Spiced apple cider. Convenient if you enjoy extra spice, but check the ingredient list and sweetness so the cinnamon and rum do not become overwhelming.

How to Make Apple Cider Cocktail

Dice the apple and add it to a small saucepan with the honey, sage, cinnamon and lemon juice. Simmer for 5–7 minutes, until the pieces soften and become glossy but still hold their shape.

Combine the cider and dark spiced rum. Adjust the rum to taste.

Divide the caramelized apples and syrup between glasses. Pour the cider mixture over top and serve with a small spoon. Assemble just before serving so the apple pieces remain glossy and distinct.
