Hey folks – I hope you all are doing well!

Our greenhouse is still producing plenty of summer vegetables. So, I am not ready to switch to apples and pumpkins just yet! Instead, I have another fresh recipe to enjoy while zucchini, cucumbers, and tomatoes are still abundant.

This zucchini panzanella salad is particularly great if you have lots of zucchini to use up. Raw zucchini can taste quite mild, but a short marinade gives it so much more character. Add cucumber, tomatoes, bread, and basil, and you get a beautiful summer bread salad with plenty of flavour and texture. So, let’s dive into!

What Makes This Zucchini Panzanella Special?

There is a lot to love about this simple salad. Most importantly, it puts fresh zucchini front and centre rather than treating it as just another addition.

Marinated Raw Zucchini Salad

Marinating the zucchini first makes all the difference. Instead of adding plain raw zucchini directly to the salad, it gets some time to absorb the dressing.

  • More flavour: Raw zucchini has a delicate taste, so olive oil, vinegar, and salt make it much more flavourful.
  • Better texture: The marinade gently softens the zucchini while it still retains a pleasant bite.
  • Extra juices: As the zucchini sits, it releases some liquid that combines with the marinade. The bread can then soak up all that goodness.
  • No cooking: This raw zucchini salad is particularly convenient on warm summer days when you don’t want to turn on the oven.

As a result, this marinated zucchini salad tastes fresh and vibrant rather than bland.

Zucchini Panzanella: A Fun Twist on Classic Salad

This panzanella with zucchini is a fun variation on the beloved Italian bread salad. It still features many familiar ingredients, including bread, tomatoes, basil, onion, olive oil, and vinegar.

However, the vegetable ratio makes this version different. I used approximately two parts zucchini to one part cucumber and half a part cherry tomatoes.

Therefore, zucchini remains the star. The cucumber provides extra crunch and freshness, while the tomatoes add sweetness and some of those lovely juices associated with classic panzanella.

If you enjoy traditional panzanella but have plenty of summer zucchini, this zucchini bread salad is a delicious way to change things up.

Ingredients You’ll Need for Zucchini Panzanella Salad

You will need only a handful of simple summer ingredients for this zucchini panzanella salad recipe. For the best flavour, use fresh vegetables and good-quality olive oil.

  • Zucchini: Choose small to medium zucchini when possible. They tend to have a firmer texture and fewer seeds.
  • Cucumber: Adds extra crunch and makes this summer vegetable salad particularly refreshing.
  • Cherry tomatoes: You don’t need many. They should complement rather than overpower the zucchini.
  • Bread: Rustic bread, ciabatta, or sourdough all work nicely.
  • Red onion: Slice it thinly so its flavour doesn’t dominate.
  • Fresh basil: Be generous, especially when basil is abundant in late summer.
  • Extra virgin olive oil: Since the dressing is so simple, use one you enjoy.
  • Red wine vinegar: Adds the acidity needed for both the marinade and the zucchini panzanella salad.
  • Salt and black pepper: Season generously enough to bring out the flavour of the vegetables.

What Bread Works Best?

Slightly stale rustic bread works particularly well for a summer bread salad. Because it is already somewhat dry, it absorbs the vegetable juices and dressing without becoming soggy too quickly.

Ciabatta and sourdough are both excellent choices. You can also lightly toast fresh bread first if that is what you have available.

How to Make Zucchini Panzanella

Making this zucchini panzanella is straightforward. However, give the zucchini enough time to marinate before assembling the salad.

First, thinly slice the zucchini and combine it with olive oil, red wine vinegar, and salt. Let it sit for about 20–30 minutes. During this time, the zucchini will soften slightly, absorb the flavours, and release some of its juices.

Meanwhile, prepare the cucumber, cherry tomatoes, red onion, basil, and bread. Once the zucchini has marinated, combine everything and toss gently.

Finally, let the zucchini bread salad rest briefly before serving. About 10–15 minutes should be enough for the bread to absorb some of the dressing and vegetable juices while still retaining texture. Taste and adjust the salt, pepper, vinegar, or olive oil as necessary.

Can I Make Zucchini Panzanella Ahead?

This marinated zucchini salad requires some resting time, but I wouldn’t assemble it too far in advance. The bread continues to absorb liquid as it sits and will eventually become very soft.

However, you can marinate the zucchini ahead of time. Prepare the other vegetables separately, then add the bread and basil closer to serving.

For the best combination of juicy vegetables and pleasantly chewy bread, I recommend enjoying this panzanella with zucchini shortly after assembling it.
