Today I’m sharing this lavender affogato – perhaps one of the easiest desserts you can make when you want something sophisticated without any actual effort. All you need is vanilla ice cream, strong coffee or espresso, and lavender syrup.
Affogato is already a beautiful combination of contrasts: hot and cold, bitter and sweet, creamy and bold. A little lavender syrup adds another layer without changing the character of this classic coffee dessert. And while a traditional affogato is usually quite petite, you can easily make this version more indulgent with an extra scoop of ice cream and a little more coffee. So, let’s dive into this affogato with lavender!

Affogato, or affogato al caffè, is a classic Italian dessert consisting of vanilla gelato or ice cream topped with hot espresso. The Italian word affogato means “drowned”, which rather perfectly describes the preparation: a scoop of cold gelato is literally drowned in freshly brewed coffee.

Traditionally, an affogato is made with a scoop of vanilla gelato and a shot of espresso. However, there is plenty of room to adjust the proportions, particularly when making it at home.

A classic affogato hardly needs improving, so this lavender affogato does not stray far from the original idea. Instead, a spoonful of lavender syrup adds a delicate aromatic note that works surprisingly well with both coffee and vanilla.

Ingredients You’ll Need For Lavender Affogato
You only need three ingredients for this lavender affogato recipe, which makes the quality and balance of each one particularly important.
- Vanilla ice cream or gelato. Choose a good-quality vanilla ice cream that is creamy but not excessively sweet. Vanilla provides a mellow base that pairs beautifully with both espresso and lavender. Gelato is naturally an excellent choice, too.
- Strong coffee or espresso. Espresso is the traditional option, but very strong freshly brewed coffee works as well. Since the coffee is poured over sweet ice cream and lavender syrup, it should be robust enough not to disappear.

How To Make Lavender Affogato
Making lavender affogato could hardly be easier, but the proportions make a noticeable difference. In particular, you can decide whether you want something closer to a traditional affogato or a more substantial espresso ice cream dessert.
How Much Coffee Should You Use?
A traditional affogato commonly pairs one scoop of gelato with a shot of espresso. Personally, I prefer a stronger coffee presence and used more than one shot of strong coffee for this lavender affogato.
There are several reasons you may want to use more:
- For stronger coffee flavour. Extra coffee keeps the dessert from becoming predominantly sweet and creamy.
- With a generous scoop. A particularly large scoop of vanilla ice cream can easily handle more than one shot.
- With two scoops. If you turn this into a more indulgent coffee and ice cream dessert, increasing the coffee helps maintain the right balance.
- With sweet lavender syrup. Strong coffee provides bitterness that offsets the additional sweetness.
Just avoid adding so much coffee that the ice cream immediately turns into a bowl of coffee soup. You still want some of that cold, creamy texture to remain.
How Much Lavender Syrup Should You Add in This Affogato?
I used about 1 tablespoon of lavender syrup, which gave this lavender coffee dessert a noticeable but balanced floral character.
However, lavender syrups vary in both sweetness and concentration, so adjust the amount to taste. Use a little less for a subtle background note or slightly more if your syrup is mild.
It is better to start conservatively. You can always drizzle in a little extra lavender syrup, whereas an overly floral affogato is difficult to correct.
One Scoop Or Two?
One generous scoop of vanilla ice cream makes a lovely individual affogato and keeps the emphasis on the coffee. However, there is absolutely nothing wrong with using two scoops if you want a more indulgent coffee dessert recipe.
- One generous scoop makes a lighter coffee dessert and stays closer to the classic affogato idea.
- Two scoops make a richer, more indulgent dessert where the ice cream becomes more prominent.
- Adjust the coffee accordingly. With two scoops, you will probably want a little more strong coffee to maintain the contrast between bitter and sweet.
For an after-dinner treat, one generous scoop should be plenty. For a full dessert, two scoops are definitely more fun.
Putting It Together
Add about 1 tablespoon of lavender syrup to a small serving glass or bowl, adjusting the amount to taste. Pour in the freshly brewed hot espresso or strong coffee and briefly stir, if needed, to combine. Then add one generous scoop of vanilla ice cream or gelato, or two scoops for a more indulgent dessert. Serve the lavender affogato immediately, while the coffee is still hot and the ice cream is cold and creamy, slowly melting into the coffee.

This is one Italian dessert I’ve never tried.
I know some people don’t like floral flavours with their food but I sure do! Violet especially but lavender too. This looks wonderful Ben! and so pretty.
