Festive holiday cranberry brie bites with puff pastry, creamy brie, pistachios, rosemary, and cranberry jam – a perfect Christmas appetizer.

Ingredients

  • 2 sheets of puff pastry (~250 gr. total), thawed as per package instructions

  • 225-250 gr. (8 oz.) Brie

  • 2/3 to 1 cup thick cranberry sauce or jam

  • 1/3 cup (35 gr.) shelled pistachios, salted or unsalted, chopped

  • 1 sprig of rosemary, leaves torn off stem and minced

  • nonstick cooking oil spray, for pan

  • flour, for work surface

  • orange zest, optional, for garnish

  • fresh cranberries, sliced, optional, for garnish

Directions

  • Preheat oven to 375 F (180 C). Lightly grease a mini muffin tin (or tins) with cooking spray.
  • Unfold the thawed puff pastry sheets and roll with a rolling pin on a lightly dusted with flour surface. Cut each sheet into about 16 equal pieces, cutting 4 strips by 4 strips. Press each square into a muffin tin cavity. Press firmly into the bottom of the muffin tin and form gently into a cup like form.
  • Slice the brie into 32 one inch pieces. Place each piece into the puff pastry and add ~ 1 teaspoon of the jam. Sprinkle with the chopped pistachios and rosemary.
  • Bake for about 16-20 minutes in the preheated oven or until puff pastry is golden brown and the Brie is melted. If you are using smaller tins, you will need to decrease the baking time.
  • Remove from the oven and allow to cool for several minutes before removing from muffin tins. If desired, sprinkle with the orange zest, extra rosemary leaves, and fresh cranberries.
  •  Store leftovers in an airtight storage container in the refrigerator for up to 3 days. To reheat, place bites onto a baking sheet and bake at 350 degrees F until warmed through. You can also preheat them in a microwave for about 30 seconds.
