Hello everyone. I hope you are doing well. And I also hope you like chocolate truffles. Because these Candy Cane Chocolate Truffles are irresistibly good.

Truffles are one of the easiest and most festive treats you can enjoy. Importantly, they are a breeze to make, and they can stay fresh refrigerated for quite some time (But they certainly disappear quickly.) While cookies and other desserts are great in December, we all need some quick and easy recipes for the holidays, too.

Candy Cane Chocolate Truffles

When making truffles, I prefer to use this method for ganache. Finely chop the chocolate and place in a bowl along with butter. In a meantime, bring the cream to a boil in a separate pan. Then pour hot cream over the chocolate and let it stand for a minute or so. Finally, mix everything with a spatula or spoon. You can also melt the chocolate using a double-boiler, if you prefer.

But I decided to go an extra mile this time, and I also coated the shaped truffles into some white chocolate before coating into crushed candy cane. For the best result, you can temper white chocolate. I used a simplified “seeding” method and opted for microwaving. For this method, finely chop white chocolate. Reserve about 1/3 of it and melt the remaining using either a double boiler or microwave (Be careful with microwave, and melt it in 30-20 seconds intervals stirring it well every time before next interval.) When the chocolate has melted, add the reserved chocolate. This “seeding” method will cause the already melted chocolate cooling quickly as required for tempering.

If you don’t want to use white chocolate coating and candy cane, simply use only peppermint extract added to the ganache.

Ingredients

  • 2/3 cup whipping (35%) cream

  • 350 gr. dark chocolate (70 % or higher), finely chopped

  • 60 gr. butter

  • few drops of peppermint extract

  • a small pinch of salt

  • 200 gr. white chocolate, finely chopped

  • about 1/2 cup crushed candy cane

Directions

  • Bring the whipping cream in a small saucepan to a boil.
  • Place the chopped chocolate, butter, and salt in a medium bowl.
  • Pour the boiling cream mixture over the chopped chocolate. Let stand about 60 seconds then combine with a spatula. Add few drops of peppermint extract and mix again.
  • Cover and chill for at least couple of hours, until firm enough.
  • Scoop out some chocolate ganache (It’s easy to do with a small scoop like a melon spoon), then using your hands, shape it into the balls. I was able to get about 24 truffles.
  • Melt the white chocolate using a double boiler. You can also temper it or use a simplified tempering method “seeding”. For the seeding method, reserve about 1/3 of the grated chocolate. Place the 2/3 of the chocolate in a microwave-safe bowl and microwave 30 seconds then stir. Place the bowl back and microwave for 20-25 seconds, then stir. Microwave again for 15 seconds then stir. If the chocolate has not melted, repeat 15 seconds again.
  • Add the reserved white chocolate to the melted chocolate and let it stay for a minute or so then stir to combine. If there’s still few lumps of chocolate, microwave for 10-15 seconds.
  • Coat the truffles into melted chocolate and sprinkle with the candy cane.
  • Let the chocolate set for about an hour then refrigerate. Keep refrigerated for 4-5 days. Enjoy!
