While looking for new ways to make watermelon syrup, I came across a fantastic article called “You’re Making Your Watermelon Syrup All Wrong” by Cocktail Contessa. It introduced me to the brilliant idea of making using a cold-process method instead of cooking it – and I was immediately sold.
The concept is surprisingly simple. Remember eating fresh strawberries sprinkled with sugar as a kid? After sitting for a while, the berries would release plenty of wonderfully sweet juice. The same principle works here. Sugar naturally draws the juice out of fresh watermelon, creating a beautifully flavoured syrup without ever turning on the stove. The result is a homemade syrup that tastes brighter, fresher, and much more like ripe summer watermelon than traditional cooked versions.

Can I Use Frozen Watermelon?
Yes.
Frozen watermelon works well if thawed first. As it defrosts, it naturally releases even more juice, making it ideal for this cold-process method. Just be sure to include all the juices that collect during thawing.
How to Make Watermelon Syrup
Place the watermelon chunks and sugar in a large glass jar or food-safe container. Lightly muddle them with a wooden spoon or spatula to release some of the juices.
Cover and refrigerate for at least 12 hours, preferably up to 24 hours, stirring once or twice until the sugar has dissolved completely.
Strain the syrup through a fine-mesh sieve into a clean bottle or jar. Stir in the vodka if using, refrigerate, and enjoy.
Storage and Shelf Life
Store the finished syrup in a clean glass bottle or jar in the refrigerator.
Without vodka, it is best enjoyed within about one week.
If you stir in approximately 1/2 oz (15 ml) vodka, the syrup may keep for up to two weeks. Always discard the syrup if it develops bubbles, foam, or signs of fermentation.
