Myself? SOS! It’s been so hot lately. Even though it’s end of August, our current heat wave has been lasting for 4 days now. Indeed, it’s been the most brutal this summer. I am so ready for autumn. On the other hand, I am not – I have so many summer recipes to share with you yet. But actually, it’s going to be significantly better on weekend. Of course, if we can trust these forecast folks :)

Without further ado, let’s talk about another summer ides. Besides, I am back with lavender recipes, and that would be my major trend for the next couple of weeks. Basically, until fall, I am afraid.

Melon Lavender Mint Salad

This Melon Lavender Mint Salad is super fresh and delightful. What’s in it? Honey, lime juice, mint, lavender, and crushed peppercorns. Honey adds an extra sweetness while lime juice balances it out; and it’s so refreshing! Mint adds tons of freshness as well as pink peppercorns. If you’re skeptical about lavender here, it pairs so well with melons. As I used fresh lavender buds, this added just a subtle lavender hint. If you are using dried lavender, you will need to use even less, like twice less, because it’s more potent than fresh lavender.

This Melon Lavender Mint Salad is a breeze to make with just a few simple ingredients. It’s super fresh and delicious which makes it a lovely summer dish! Serves 2 as the main dish or 4 to 6 as a side or appetizer.

Ingredients

  • 4 cups cantaloupe (or other melon) chunks or balls

  • 1/4 cup honey

  • juice of 1 or 2 limes

  • 1/2 cup fresh mint, chopped

  • 1/4 tsp. fresh lavender buds or 1/8 tsp. dried (minced)

  • few pink peppercorns, crushed (optional)

Directions

  • In a small bowl combine the honey and lime juice and whisk until well incorporated.
  • In a large bowl place the melon along with the mint, lavender, pink peppercorns (if using). Drizzle over with the dressing and mix well to coat, You can serve right away, but I recommend chilling it for an hour, to allow the flavours to mingle. Enjoy!

  2. Melon is always such a treat in the summer months! The mint and lavender looks so pretty with the orange cantaloupe and I know the peppercorns have to add such a nice burst of spice to balance the sweet honey. Another winner Ben!
