Ingredients

  • ~ 2/3 cup fresh cranberries

  • Juice of 1/2 medium orange

  • 2-3 tbsp. of honey

  • ~400 gr. goat’s cheese

  • 2-3 tbsp. dried cranberries (optional)

  • 1 tsp. fresh rosemary, chopped

  • 1/4 whole nutmeg, freshly grated

  • 3-4 dried (dehydrated) orange rings, optional

Directions

  • Place the cranberries, orange juice, and honey in a small saucepan and let it simmer for about 5 minutes, to soften the berries. Off heat and slightly cool. Blend it up, using an immersion or regular blender.
  • Combine the goat cheese with this cranberry sauce, dried cranberries and dried oranges (if using), rosemary, and nutmeg. Using an immersion or regular blender, process until well-blended and smooth. Try and add more honey if necessary. Enjoy!
