Andrey’s Idea
Indeed, you might know me for introducing some unusual combos. I can assume some of you might have labeled them as âNo way I would try thisâ. Like this lavender Blackberry Pasta.
Honestly, I am that person whoâs been planning to incorporate lavender in a salad dressing. Doesn’t this sound fabulous?
However, I cannot take a credit for this Smoked Salmon Apricot Salad. Well, I am taking the credit for making the salad and taking the pictures. But the idea belongs to Andrey.
Hideous Salad
Yes, thatâs right. Even though most of the time (Approximately 87,6%) I make the kitchenâs decisions by myself, once in a while I generously ask for Andreyâs opinion. He is actually good at developing recipes.
However, few times his ideas have been the way too creative.
Once, it was 2009 or so â time when I wasnât a food blogger yet, he made a very special salad on his Birthday. That was a Tomato salad with oranges and a horrendous sweet dressing of sour cream and ginger. That was the hideous salad Iâve ever tried (Well, mostly smelt and seen) in my entire life! Needless to say, most of the guests were really reluctant to give it a try.
To be impersonal, I should mention that that wasnât the only Andreyâs fault because he had seen the idea in one food magazine. I am not sure if the editor is still working here.

But I cannot say anything negative about this Smoked Salmon Apricot Salad because it was truly delicious. Unfortunately, the apricots werenât that great â ripe but not meaty and juicy enough. But we cannot blame Andrew for them, right? Sure, with the mellow sweet apricots, this salad would be even more delicious.
Anyways, smoked salmon and apricots turned to be great friends. Should I mention goat cheese and a creamy avocado dressing to go with the salad?
So if you a fan of trying slightly unusual combos, this Smoked Salmon Apricot Salad is perfectly for you!

Ingredients
Salad
- 200-225 gr sliced smoked salmon
- 4-5 apricots, pitted and sliced
- handful of arugula
- 100 gr dill coated goat cheese
- edible flowers
Avocado Cream-Dressing
- 1 very ripe avocado
- juice of 1/2 lemon
- 1/3 cup olive oil
- 2 tablespoons of mustard
- 2 tablespoons of maple syrup (optional)
- salt and pepper, to taste
Instructions
- For a avocado cream-dressing, just combine the avocado flesh and the remaining ingredients in the blender and process until creamy.
- For a salad, combine all the ingredients and divide between plates. You can also drizzle with a bit of oil. Serve with the avocado cream-dressing.
- Enjoy!

Major colors! I’m all for interesting combinations of flavors, maybe not tomatoes and oranges with that dressing, but this avocado dressing works for me. Love smoked salmon and I think even dried apricots would do nicely. Cheers!
