Summer is the time for beautiful salads. While we enjoy salads all year round, I am always excited about seasonal produce as a part of our salads – fresh vegetables, fruits, berries, and herbs.
Raw Zucchini Salad
I bet you know you can enjoy zucchinis raw. Raw zucchinis may not be everyone’s cup of tea, but if you love them, then this recipes will be right up your alley.
It is super easy to make just with a bunch of available ingredients such as fresh zucchinis, herbs, pine nuts, feta, and olive oil.
As always, this salad is easy to tweak and adjust to your preferences. Don’t like fresh zucchinis? Then go ahead and grill up some or stir in the grilled leftovers. I used mint and oregano which are fresh and flavourful, but you can use other fresh herbs like dill, parsley, or basil. Don’t have pine nuts on hands? You can use pumpkin or sunflower seeds then. So many options!
You can serve this salad as a side dish or light main course. Fresh bread, grains (quinoa, couscous, etc.) or grilled meet or fish would be a perfect addition.

Raw Zucchini Salad

minutesThis Raw Zucchini Salad with fresh herbs, feta, and pine nuts is a fresh summer salad for all zucchini lovers. 3-4 as a main course or up to 8 as a side dish.
Ingredients
2-3 medium zucchinis, sliced (about 6 cups sliced)
1/4 cup chopped mint leaves, loosely packed
1 tbsp. chopped oregano
1/4 cup feta, crumbled
2 tbsp. pine nuts, toasted
2-3 tbsp. olive oil
zest of one lemon
1/2 to 1 tbsp. lemon juice
salt and black pepper, optional to taste
Directions
- Simply combine the zucchinis, chopped herb, olive oil, and lemon in a bowl to coat. If desired, season with salt and pepper. You can serve the salad immediately or chill for an hour or so to allow the flavours to mingle.
- Before serving, sprinkle with the feta and pine nuts. Enjoy!

I think using fresh raw zucchini is a fabulous idea in salads. Summer is certainly the season! Crumbled feta cheese is a natural pairing with zucchini and beautiful in this salad. The addition of pine nuts is a nice touch too.

I love this idea, Ben! It’s similar to a cucumber salad, but using zukes instead. I actually just made a couple recipes with zucchini. We have an extra one in the fridge right now, so this salad might have to show up. Plus, you had me at feta and pine nuts!
