Spring? Not Yet!

I hope this week has been treating you well so far. Has spring arrived to where you live yet? I bet so. Nova Scotia, Canada? Hmm, not quite yet. It’s been a couple of lovely sunny and warm days that really felt like spring. But we are going to have another winter storm on Tuesday and Wednesday. The forecast folks do not give too many details. Well, not exactly. In fact, they are promising many things going on – strong gust winds, snow, rains, and possibly freezing rains at some parts. They are not sure about more specific details. For example, they expect the total amount of snowfall anywhere from 10 to 25 centimeters (with higher amounts likely over few parts of the province.) Well, I guess we will simply wait and see what we are going to have after all!

These Maple Candied Cashews are irresistibly good, I swear. If you think this recipe will last for a couple of days, good luck then. I will give it an hour or two – okay maybe one day at most. Yup, dangerously delicious and addictive.

Also, it is super easy to make them. I used the same method and ingredient list – just like in these Candied Pine Nuts. Basically, you will need just a few simple ingredients including cashews, maple syrup, light brown sugar, butter, and salt. Vanilla extract and maple flavour are optional, but they will make the flavour even more pleasant. You will need only a heavy-bottomed pan (skillet), spatula, and less than 15 minutes of cooking time. The hardest part will be probably waiting until the cashews have cooled down and set, but it will take only around 30-45 minutes.

Please note that this maple coating is rather soft and sugary – not the crunchy type of candied nuts. It somewhat remind me the texture of old classic hard fudge.

These easy Maple Candied Cashews require just a few simple ingredients and about 10 minutes of active time (plus, 30 minutes for cooling.) Coated in a luscious soft glaze, these nuts are insanely delicious!

Ingredients

  • 2 to 2 and 1/2 cups of cashews

  • 100 gr. butter

  • 1/2 cup maple syrup

  • 2/3 cup loosely packed light-brown sugar

  • a good pinch of salt

  • 1 tsp. vanilla extract

  • a few drops of maple flavour (optional)

Directions

  • In a small-medium heavy-bottom saucepan or skillet melt the butter over high medium heat. Add the maple syrup, brown sugar and salt. Boil for 3-4 minutes, whisking occasionally, until slightly thickened and lightly browned.
  • Reduce heat to medium low. Keep the syrup over this heat for 30-40 seconds to cool down a bit.
  • Stir in the cashews, stirring with a spatula or wooden spoon, to coat.
  • Keep cooking, stirring often, for about 7 to 10 minutes, until the nuts are pleasantly browned. Keep an eye on the saucepan not to burn the caramel on the bottom (you might need to lower heat even more if the mixture boiling too much.)
  • At the end, if desired, stir in the vanilla extract and (or) maple flavour. Stir for 30 seconds and turn the heat off.
  • Transfer the nuts on a large plate or tray, linen with parchment or foil, flattening with a spatula or spoon. Let it cool for about 30 minutes or so then break into clusters and enjoy. Store the leftovers in air-tight container.

    What an upscale, gorgeous snack! The maple flavour would definitely enhance the rich flavour of the cashews. These look like they’d be perfect with a glass of wine.

    Snow? I heard that there’s a big storm going through up in the northern areas. It’s cold down here, but no snow! Early spring is the perfect time for maple recipes with all of the sugar shacks working overtime to make that delicious syrup. I need to make a batch of these nuts – the sweet + salty sounds fantastic (and quite addicting)!
