This Green Gazpacho with plain yogurt, avocados, cucumbers, and lots of fresh herbs is a delicious, healthy, light, and refreshing soup recipe that is so perfect to beat the summer heat!
Hello everyone! I hope you are doing well. If you haven’t checked your calendar for a while, let me remind you it’s the middle of August (How come?) already! That means we’re slowly moving to fall with the days getting cooler (Yay to this – the best part of summer!)
However, this does not mean I am going to start posting apple and pumpkin recipes. Not yet. Not for at least another month. In fact, I have already made two apple recipes, but only because I am expecting to be quite busy in September, so I simply want to be a bit ahead. In the meantime, I am continuing to embrace summer recipes. What’s on the agenda for the next couple of weeks? You can expect ice cream, glass-shot desserts, donuts, zucchini recipes, and most importantly, some awesome summer and early fall appetizers from Russian cuisine.
As I mentioned, we’re finally having some relief from the summer heatwaves. It’s going to be very comfortable for the next week (Well, you never can trust those weather forecast folks, right? lol), but I am not giving up on summer salads, bruschettas, and cold soup. Speaking of chilled soup, this summer I have shared two recipes that I strongly recommend: this Svekolnik – Russian Cold Beet Soup and this Cherry Gazpacho.
This Green Gazpacho is irresistible delicious, rich, yet light and refreshing Green Gazpacho.
- Yogurt makes an excellent base – it is rich, nutritious, and slightly tart. You can add more or less of lemon juice depending on your yogurt;
- Creamy avocado for a rich and smooth texture;
- Lots of herbs. I strongly recommend using aromatic dill and refreshing mint; green onions, parsley, oregano, and basil would be a nice addition too (But be careful with basil and oregano because of their strong flavour);
- Refreshing cucumbers.
It sounds delicious and refreshing, isn’t it? It is! I hope you’re embarrassing summer days as much as possible (Put back this pumpkin back, folks! lol), and you can join me and enjoy this Green Gazpacho.

Green Gazpacho
Ingredients
- 3 cups of plain yogurt (Greek yogurt would be an excellent choice)
- 2 English cucumbers, peeled if desired
- 2 ripe avocados, peeled and stoned.
- a large bunch of fresh herbs (I used mostly dill plus some green onions and parsley), chopped
- 1-2 garlic cloves, minced
- Juice of ~1/2 lemon (Depending on your yogurt)
- a good pinch of salt and pepper
- Olive oil for serving
Instructions
- Reserve 1/2 of one cucumber and some herbs for finishing. Chop the remaining cucumber and place in a container/blender along with the yogurt, avocado flesh, herbs, and garlic, Using either regular or immersion blender, purée until smooth.
- Try and season with salt, pepper, and lemon. The amount of lemon juice will depend on how sour your yogurt is – you might even want to skip it at all. Pulse a few times more to blend, and check if you need to add more seasonings.
- Refrigerate for at least a couple of hours.
- Serve garnished with the sliced/ribboned reserved cucumber, herbs, and if desired, a drizzle of olive oil.
- Enjoy!

Ben, this does indeed sound delicious and refreshing! But that’s not all- your photos are stunning! Hauntingly beautiful! This green gazpacho is highlighted so well- and it’s sounds so creamy with yogurt and avocado! I cannot believe we are in mid August already! Hoping the last few months of 2020 are better for all! Our weather patterns seem to be pretty similar to yours, Ben. When it’s hot in your area, we’re hot here. Likewise, we’ve got some really pleasant temperatures around our area this week. I love this idea of using fresh produce to make a green gazpacho. Sounds like a delicious and easy lunch, my friend!

I’m getting excited for the fall flavors, but not the weather. I’m very happy with my August heat, thank you very much! ;) This gazpacho is so pretty, I’ve never seen a green one! This would be lovely to serve on a hot summer day!
