When it comes to blogging, I consider myself a cook, not a baker or a confectioner. Yes, both Andrew and I love sweets (mostly ice cream and chocolates, other things we can easily skip), and I make them, too. But they are usually quite specific things like dessert crepes, truffles, shortbread cookies, or trifles. As you can see, these are mostly easy things that do not require hours of cooking, baking, or assembling.
And in the summer, the list is usually even shorter – because I am not a fan of turning our oven when it’s already hot!
With some exceptions, of course. Like with this Chocolate Cherry Amaretto Trifle.
Chocolate Cherry Amaretto Trifle
Normally, a trifle is a simple dessert that does not require a lot of time, and which is often made with leftovers and pre-made ingredients (i.e., store-bought cookies or biscuits, Jell-O, frozen whipped cream, etc.)
This trifle, however, requires some extra effort. But the result will be a much more refined and elevated recipe.
Elements of This Trifle
First, you will need to make chocolate brownies (or chocolate shortbread would also work). Of course, to save time you can use store-bought, but for the best result I would recommend homemade. I baked some brownies for our neighbors the day before and used leftovers for this dessert. Also, I would suggest less-sweet brownies or cookies, with the use of dark or extra dark chocolate. They would go so well with other sweet elements! If making from scratch, you can use the recipe for Lavender Brownies, just simply omit lavender.
Next, you will need to make an easy cherry jam with Amaretto. You can make it in advance and a large batch to enjoy it later, just like regular jam.
Lastly, you will need to make a luscious and silky mascarpone cream with some white chocolate and a touch of Amaretto. It is so good on its own, and perfectly balances the richness of brownies and freshness of jam.
While Amaretto adds something very special and sophisticated to this dessert, you can certainly avoid alcohol. Or use something different, such as brandy or bourbon.

Chocolate Cherry Amaretto Trifle

Cooking time does not include time for making brownies.
Ingredients
~250-300 gr. Dark chocolate brownies – you can use this recipe just do not add lavender
- Cherry Amaretto Jam:
3 cups (~450 gr.) pitted frozen cherries thawed
1/2 cup (100 gr.) granulated sugar
1-2 tbsp. (15-30 ml.) fresh lemon juice
100 ml. (slightly less than 1/2 cup) Amaretto, divided
1 tbsp (about 8 gr.) classic pectin
- Mascarpone Amaretto Cream:
1/2 cup (115 gr.) mascarpone, room temperature
1/2 cup (120 ml.) heavy / whipping (35%) cream
70-100 gr. white chocolate, roughly chopped
1 tsp. vanilla extract – or seeds or 1/2 vanilla bean, scrapped
1-2 tbsp. Amaretto
- Assembling and Garnishing:
1 tbsp. Amaretto (optional)
more of the brownies, crumbled
slivered almonds, lightly toasted
dark or extra dark chocolate, shavings
fresh mint
fresh cherries
Directions
- Cherry Amaretto Jam:
- To make the jam, make sure you remove frozen cherries from the freezer in advance to let them thaw. Once thawed, remove the excess of liquid (you do not need to dry them well, keep some of the juices.)
- Place the cherries along with the most of (reserve 1 tablespoon or 30 ml.) the Amaretto, lemon juice, and sugar. Bring to a soft boil, then reduce the heat to low and let simmer, mixing occasionally, for about 25 minutes, until the cherries are soft and the mixture has thickened.
- Stir in reserved Amaretto and the pectin and keep cooking, whisking to dissolve pectin well, for 2 minutes. Off heat and let the jam completely cool.
- Mascarpone Amaretto Cream:
- Set a small mixing bowl over a small saucepan of simmering water and place the chocolate in the mixing bowl. Stir until the chocolate is completely melted. Remove the bowl from the heat and set aside to cool for 10 minutes. For a faster method you can melt the chocolate in a microwave, with 3-4 20-second intervals.
- While the chocolate is cooling, combine the mascarpone, whipping cream, and vanilla together until smooth. You can do it with a regular wiring whisk for a minute or so – or with a hand mixer at lower speed, for 20-30 seconds. You do not need to actually whip anything, just to combine and make the mixture lighter.
- Assembling:
- To assemble, you can use 4-6 individual trifle bowls or a larger one. Place a few pieces of roughly broken brownie on the bottom. If desired, drizzle with a little of extra Amaretto (it is not necessary as the jam has enough moisture, but it adds extra flavour.)
- Generously spread some of the jam over the brownies. Lastly, arrange a generous layer of mascarpone cream. If the height of your glasses allows, repeat the layers. Chill for 30 minutes before serving then garnish as desired and enjoy!

It sounds like it is worth the work that it takes to make this delicious dessert. Almond flavor and cherries are so good together. I think I would make this using my homemade chocolate shortbread cookies. They aren’t terribly sweet, so I think they’d be a good compliment. Thanks, Ben. This entire trifle sounds delicious (and great presentation with the chocolate shavings, too) but its the Cherry Amaretto jam that has my attention. What a creative and delicious component. I could see using that jam in a bunch of different ways – maybe as part of a Black Forest Cake!
