Hey folks – today, I’m sharing a dessert that feels both indulgent and practical — and honestly, that is always a winning combination. If you happen to have leftover brownies sitting around, this is one of the best ways to turn them into something a little more impressive and festive. So, let’s dive into this Chocolate Cherry Amaretto Trifle.

Why You’ll Love This Chocolate Cherry Amaretto Trifle

If you enjoy layered desserts that look impressive but are actually quite simple to assemble, this one is well worth trying.

  • A clever way to use leftover brownies. This trifle is one of those desserts that feels luxurious while also being wonderfully practical.
  • Rich but balanced. The deep chocolate flavour, tart cherry jam, and airy mascarpone cream work together beautifully.
  • Perfect for entertaining. Since it can be assembled ahead, it is ideal for holidays, gatherings, or dinner parties.
  • Elegant flavour combination. Chocolate, cherry, and Amaretto are a naturally sophisticated trio that never really goes out of style.
  • Easy to customize. You can make it with homemade or store-bought brownies, adjust the sweetness, or even skip the alcohol if preferred.

What Makes This Chocolate Cherry Trifle So Good

What I really like about this dessert is that it balances richness, freshness, and creaminess in every spoonful.

The brownies bring deep chocolate flavour and a slightly fudgy bite, while the cherry layer adds brightness and a subtle fruity sharpness that keeps the dessert from feeling too heavy. Then comes the mascarpone cream – silky, luscious, and just lightly sweetened – which ties everything together beautifully.

And of course, there is Amaretto. Even a small amount adds a warm almond-like aroma that makes the whole dessert feel just a little more special and grown-up.

Flavour and Texture Profile

This Chocolate Cherry Amaretto Trifle is rich, creamy, fruity, and just a little boozy in the best possible way.

You get:

  • deep chocolate flavour from the brownies,
  • juicy tart-sweet cherry notes,
  • soft almond warmth from the Amaretto,
  • and a smooth mascarpone cream that makes everything feel luxurious.

Texture-wise, it is a lovely contrast of:

  • tender brownie pieces,
  • glossy jam,
  • airy cream,
  • and a few crunchy garnishes like toasted almonds or chocolate shavings if you choose to add them.

Elements of This Chocolate Cherry Amaretto Trifle

Although this dessert looks elegant, it is made from just three simple components, and each one plays an important role.

Brownies

First, you will need chocolate brownies – or even chocolate shortbread if you want a slightly firmer, more cookie-like base. Of course, to save time, you can absolutely use store-bought brownies, but homemade will give you the best flavour and texture.

In my case, I baked brownies for our neighbours the day before and used the leftovers for this dessert. That is part of what makes this recipe so appealing: it is a delicious way to repurpose something you already have.

I would recommend using less-sweet brownies, ideally made with dark or extra dark chocolate. Since the trifle also includes jam and cream, a slightly deeper and less sugary brownie gives the best balance. If you are baking from scratch, you can use the recipe for your Lavender Brownies – simply omit the lavender.

Cherry Amaretto Jam

Next comes a quick and easy cherry jam with Amaretto, which brings brightness, fruitiness, and a touch of sophistication.

It is easy to prepare and can even be made in advance. In fact, you can make a larger batch and keep the extra just like regular jam – which is never a bad thing.

Mascarpone Amaretto Cream

Lastly, you will need a luscious mascarpone cream made with a little white chocolate, vanilla, and a touch of Amaretto.

This cream is smooth, silky, and lightly sweet, and it balances the richness of the brownies and the freshness of the cherry layer beautifully. Honestly, it is so good that you could happily eat it on its own with a spoon.

Can You Skip the Alcohol?

Yes – absolutely.

While Amaretto adds something very special to this dessert, you can omit it if needed. You could also replace it with something else, such as:

  • brandy, for a warmer, deeper flavour,
  • bourbon, for a slightly bolder edge,
  • or simply leave it out for an alcohol-free version.

Possible Additions and Variations

Although this recipe is already delicious as written, you can absolutely customize it depending on what you have on hand.

  • Use chocolate shortbread or chocolate cake instead of brownies if preferred.
  • Add more texture with chopped toasted almonds, hazelnuts, or even amaretti crumbs between layers.
  • Swap the cherries for raspberries or dark sweet cherries if that is what you have available.
  • Try another liqueur such as brandy, bourbon, or cherry liqueur.
  • Make it alcohol-free by omitting the Amaretto and using a splash of almond extract very sparingly, if desired.
  • Serve it in individual glasses for a more polished dinner-party presentation.

Tips for the Best Chocolate Cherry Amaretto Trifle

A few small details can make this dessert even better.

  • Use brownies that are not too sweet, especially if they are very fudgy.
  • Let the cherry jam cool fully before assembling the trifle.
  • Make sure the mascarpone is at room temperature so the cream stays smooth.
  • Do not overwhip the mascarpone mixture – it should be luscious and silky, not stiff.
  • If you want a stronger flavour, lightly brush the brownie pieces with a little extra Amaretto before layering.

Can I Make This Trifle Ahead of Time?

Yes – and in fact, I would recommend it.

This Chocolate Cherry Amaretto Trifle is a very good make-ahead dessert because the flavours meld beautifully after a few hours in the fridge. You can prepare the components in advance and assemble later, or assemble the whole dessert several hours ahead of serving.

If making it the day before, I would suggest adding the final garnishes – especially the toasted almonds and fresh mint – just before serving for the best texture and appearance.

Because it contains mascarpone cream and fruit, it is not ideal for long storage, but it does hold up nicely for a day or two. The brownie layer will soften slightly over time, which many people actually enjoy.

How to Make Chocolate Cherry Amaretto Trifle

It’s easy to assemble this Chocolate Cherry Amaretto Trifle once all three components are ready.

First, prepare the cherry Amaretto jam by cooking the cherries with sugar, lemon juice, and part of the Amaretto until softened and juicy. Stir in the pectin and continue cooking until the mixture thickens into a jam-like consistency. Let it cool completely.

Meanwhile, make the mascarpone cream. Melt the white chocolate and let it cool slightly. Then beat together the mascarpone, cream, vanilla, white chocolate, and Amaretto until smooth, silky, and lightly fluffy.

To assemble, layer pieces of brownies in the bottom of a trifle dish or individual glasses. Spoon over some of the cherry jam, then add a generous layer of mascarpone cream. Repeat the layers until everything is used up, finishing with cream on top.

For garnish, add brownie crumbs, toasted slivered almonds, chocolate shavings, fresh cherries, and a few mint leaves if desired. Chill before serving for the best texture and flavour.

Ingredients

  • ~250-300 gr. Dark chocolate brownies – you can use this recipe just do not add lavender

  • Cherry Amaretto Jam:
  • 3 cups (~450 gr.) pitted frozen cherries thawed

  • 1/2 cup (100 gr.) granulated sugar

  • 1-2 tbsp. (15-30 ml.) fresh lemon juice

  • 100 ml. (slightly less than 1/2 cup) Amaretto, divided

  • 1 tbsp (about 8 gr.) classic pectin

  • Mascarpone Amaretto Cream:
  • 1/2 cup (115 gr.) mascarpone, room temperature

  • 1/2 cup (120 ml.) heavy / whipping (35%) cream

  • 70-100 gr. white chocolate, roughly chopped

  • 1 tsp. vanilla extract – or seeds or 1/2 vanilla bean, scrapped

  • 1-2 tbsp. Amaretto

  • Assembling and Garnishing:
  • 1 tbsp. Amaretto (optional)

  • more of the brownies, crumbled

  • slivered almonds, lightly toasted

  • dark or extra dark chocolate, shavings

  • fresh mint

  • fresh cherries

Directions

  • Cherry Amaretto Jam:
  • To make the jam, make sure you remove frozen cherries from the freezer in advance to let them thaw. Once thawed, remove the excess of liquid (you do not need to dry them well, keep some of the juices.)
  • Place the cherries along with the most of (reserve 1 tablespoon or 30 ml.) the Amaretto, lemon juice, and sugar. Bring to a soft boil, then reduce the heat to low and let simmer, mixing occasionally, for about 25 minutes, until the cherries are soft and the mixture has thickened.
  • Stir in reserved Amaretto and the pectin and keep cooking, whisking to dissolve pectin well, for 2 minutes. Off heat and let the jam completely cool.
  • Mascarpone Amaretto Cream:
  • Set a small mixing bowl over a small saucepan of simmering water and place the chocolate in the mixing bowl. Stir until the chocolate is completely melted. Remove the bowl from the heat and set aside to cool for 10 minutes. For a faster method you can melt the chocolate in a microwave, with 3-4 20-second intervals.
  • While the chocolate is cooling, combine the mascarpone, whipping cream, and vanilla together until smooth. You can do it with a regular wiring whisk for a minute or so – or with a hand mixer at lower speed, for 20-30 seconds. You do not need to actually whip anything, just to combine and make the mixture lighter.
  • Assembling:
  • To assemble, you can use 4-6 individual trifle bowls or a larger one. Place a few pieces of roughly broken brownie on the bottom. If desired, drizzle with a little of extra Amaretto (it is not necessary as the jam has enough moisture, but it adds extra flavour.)
  • Generously spread some of the jam over the brownies. Lastly, arrange a generous layer of mascarpone cream. If the height of your glasses allows, repeat the layers. Chill for 30 minutes before serving then garnish as desired and enjoy!

  1. Mascarpone and fruits are match made in heaven! This is gorgeous dessert!

  2. Bread&Salt

Yummy! It looks perfect. Thanks for the recipe. Greetings.

  3. It sounds like it is worth the work that it takes to make this delicious dessert. Almond flavor and cherries are so good together. I think I would make this using my homemade chocolate shortbread cookies. They aren’t terribly sweet, so I think they’d be a good compliment. Thanks, Ben. (sorry I’m behind once again in my reading and commenting!)

  4. This entire trifle sounds delicious (and great presentation with the chocolate shavings, too) but its the Cherry Amaretto jam that has my attention. What a creative and delicious component. I could see using that jam in a bunch of different ways – maybe as part of a Black Forest Cake!

  5. Wow! Could I enjoy a bowl of that magnificent dessert. Looks amazing Ben. Beautiful photos too.

  6. Such a rich and beautiful dessert! It reminds me of black forest cakes…except that you used almond liquor instead of Kirsch.
