Hello everyone – happy weekend!
First things first – who missed Daisy? Yup, she’s been an extremely busy girl for the last two months exploring the outside world and regularly bringing some presents on the porch. In fact, I only was able to photograph my model on a few occasions (And I think most of those picks turned blurry anyway because she was in rush!) But again, summer isn’t going to last forever, so we will hopefully reunite in a couple of months.
Banana Mango Sauce Crêpes
We enjoyed these Banana Mango Sauce Crêpes about two months ago, and oh man – they were sumptuous! As it often happens, the idea was born on the spur of the moment. I just wanted to incorporate some rum (Which doesn’t often appear in our house), and crepes was the easiest idea. Butter, bananas, and spices in a form of sweet, sticky, and rich sauce combined with crepes? That’s a perfect pairing, if you ask me. Initially, I wasn’t thinking of mangos, but as we had a couple of super ripe fruit, I decided to use one, too. Indeed, their freshness nicely slightly balances out the sweetness and richness of the sauce.
Delicious Sause for Other Treats
In fact, you can use this sauce as the topping for whatever you like. For instance, think of pancakes, waffles, French toasts, or even oatmeal. I mean, decadent oatmeal topped with a boozy sauce for your weekend breakfast? I am in! As for the crepes, you can use whatever recipe you like. This is my go-to recipe for crepes. Depending on how much of the topping you would love to use for a crepe, this sauce should be enough for about 8-10 crepes.

Banana Mango Sauce Crêpes

minutesBanana Mango Sauce Crêpes offer you a luscious, sweet, buttery rich, and warming sauce with rum, maple syrup, and brown sugar. The sauce should be enough for 8-10 crepes. The cooking time does not include making crepes.
Ingredients
Crepes or any your favourite recipe
about 100 gr. (7 tbsp.) unsalted butter
3 tbsp. brown sugar
2/3 cup maple syrup
2/3 cup maple syrup
2/3 cup dark rum
3-4 ripe medium bananas, sliced
1 large mango, peeled and thickly sliced
a pinch of cinnamon
a pinch of salt
Directions
- In a large pan, combine and melt the butter and sugar; cook over medium heat 1 minute.
- Increase heat to high medium. Add the bananas and cook for about 2 minutes until lightly caramelized (But not until soft). Remove and transfer to a bowl and set aside.
- Add the maple syrup, cinnamon, and salt. Cook, stirring, for a few minutes to thicken up.
- Add the rum, cook 2 minutes.
- Return the bananas and add the mango. Cook just a minute or so until the fruit are glossy and warm. Serve immediately with crepes. Optionally, add a scoop of ice cream. Enjoy!

Yes, I used 2/3 cup. It’s quite sweet but not overly.
Still, you can start with about 1/2 cup of less, and adjust if necessary.
Oh yum! This reminds me a bit of bananas foster and I am absolutely here for combining it with some mango. And I too, think it would be perfect on oatmeal for a weekend brunch! I also love that photo of Daisy licking her lips. :-)
