Hi, friends! How’s your week treating you so far? Excited about Friday? If you say “no”, I might doubt our friendship.

But I will be honest with you. I don’t have too many words to say today. Not because I’m speechless when it comes to this delicious Roasted Grape Bruschetta. I’ve temporarily lost my inspiration (and words). No biggie. Happens every now and then.

Usually, when I don’t have much to say, I use my secret weapon. Lavender. Perhaps, not that secret. You know me joking around this topic. But today it’s just blank. Ben cannot talk about lavender? Do you see the problem now?

Roasted Grape Bruschetta? Nothing much to say here. It’s just a lovely, easy, and delicious recipe which doesn’t require any fancy ingredients. You can pick goat cheese over cream cheese, though. Besides, you can sprinkle the crostini with some nuts like almonds.

And if you’ve never made roasted grapes, you should definitely give it a try. That’s a great way to spruce up a salad or appetizer like in this Roasted Grapes, Feta, and Hazelnut Salad.

If you’re looking for a tasty, easy, but impressive appetizer, try these Roasted Grape Bruschetta.

Ingredients

  • 1 cup (150 gr.) seedless grapes

  • 1 tbsp. (14 ml.) olive oil

  • salt and black pepper, to taste

  • 1 tsp. dried herbs such as Italian seasonings

  • 7-9 slices of baguette or other bread

  • 3-4 tbsp. (45-60 gr.) cream cheese

Directions

  • Preheat oven to 200 degrees C (400 degrees F).
  • Place the grapes in a small baking dish, drizzle with the oil, and season with the salt, pepper, and herbs. Roast for about 15-20 minutes, stirring once. Remove from oven and let cool a little (I like serve crostini with warm topping, but it can be completely cool as well.)
  • Toast the baguette on a dry skillet or in a toaster as desired.
  • Spread the cheese over the warm baguette and top with some roasted grapes. Enjoy immediately!

    Well, it’s Monday and I’m already VERY excited for Friday. So I guess we can keep being friends, huh? Lucky you! hahaha. :) I love roasted grapes, but for some reason I don’t make them too often. Well, mostly because I always eat the entire bag of grapes before I get to roast them. This crostini is beautiful, Ben!! LOVE the roasted grape and cream cheese combo!
