Today I am not going to have a long post, my friends. No storytelling. No funny stories. No lullabies (Wait. How are lullabies relevant to this? I don’t know. Perhaps, I just like a relevantly new James Morrison’s song “Too Late for Lullabies”).
But the bottom line is that you won’t find any crap unnecessary words today. There is only one matter – the star of this post. It’s all about this Fig Brie Blue Cheese Pasta Bake. It doesn’t need any words today.
If you have read my previous post you know I’ve decided to dedicate all fig recipes to Chey and David who have been missing fresh figs around them this season. Which is why I didn’t send the originally bought for these guys fresh figs but instead made this Fig Brie Blue Cheese Pasta Bake (As well as 39…no, 42 other fantastic recipes).
At first, I planned on making similar to this Fig Pasta meal, just with a few new elements like blue cheese. Then I thought that baked pasta might be a good idea! What could be better than some gooey, creamy, velvety, herbaceous, and a little piquant pasta with a lovely golden crust?
Right! This Fig Brie Blue Cheese Pasta Bake is a better way to enjoy your seasonal pasta.
Fig Brie Blue Cheese Pasta Bake
The part of the brie and blue cheese is melted in a delicious creamy silky sauce while the remaining cheese pieces are mixed with the pasta. This pasta is flavored with loads of fresh thyme and a little oregano. Also, I sprinkled the pasta with some pine nuts because why not? And figs, not to mention the figs – while baking they are turning soft, ambrosian, and aromatic but not too mushy.
The only one thing I’d like to mention is about the saltiness of blue cheese – taste it while making the sauce and if necessary add less or more blue cheese / brie to adjust the taste.

Lucky us to have figs available, although my tree is now void of anymore. Between the birds and me they are all gone until next season. But the store do have them and I would like to give this a try. Cheesy pasta and the sweet fig sound like a wonderful pairing and with fresh herbs and the pine nuts I am sold. Nice one Ben!
