Chicken Grape Almond Salad

I cannot believe this is happening – I mean my first blog post on here. No, I am not a new person in blogging. Indeed, I have over 3 years of blog experience (sounds like a good highlight in a resume!)
If you have not visited the page “about”, do not worry – I am going to explain. But then visit it, please. No kidding. I was struggling to write this, so someone has to suffer reading it.
So, a few years ago, living in Russia, I got my first blog (on the blogger platform) which turned out quite a success. Having been working on it for about 3 years, I decided to wrap it up last summer since I had my new life, in Canada, and that did make a sense.
Thus, I got my second blog (again on blogger) to which I had been devoting a lot of my time but which did not turn out a success :) Indeed, I did not consider that blog like a long-term project planning eventually to get a serious one. At the end of last year, I fully decided to get my third blog and take a pause until that time.
Well, I did not anticipate the pause would last for over two months!
It seems I have lost all my skills. I am trembling too. Plus, I am kind of an impatient person. I could have waited for a few days, but I wanted to give it a try right away! I should have spent some time editing some new pictures, but I decided to do it tomorrow. That is why you are not going to see today some totally seasonal food and ingredients such as blood oranges. Sorry about that. But we have got a lot of time together. Just promise you will be back :)

On the other hand, being fair enough, this salad is not a bad one to start this project off. And it is totally okay we had it last October, all right?
I won’t be spending too much time describing the salad since I have got a too long massage for the very first post. In a nutshell, it is light but satisfying, succulent and refreshing. Not bad, not bad.
- 1,5-2 cups salads
- 2 chicken breasts, cooked, cooled and sliced
- 1 cup seedless grapes, halved
- 1/4 cup almonds, toasted
- 1/3 cup feta cheese, crumbled
- 1 tablespoon walnut oil
- 2 tablespoons raspberry infused vinegar
- black pepper, to taste
- salt, optional
- In a small cup combine the oil, vinegar and pepper. If desired, add some salt as well, to taste.
- In a bowl mix the salad, chicken, and grapes.
- Add the dressing and toss to coat.
- Divide between two plates and sprinkle with the feta and almonds.
Please be advised - this is not a side dish but a separate meal. If you are going to serve it like a side dish, the number of servings will increase.
